Need a healthy, and extremely easy lunch treat that is sure to put a smile on your kiddos’ faces? Honey, I’ve got you covered! These apple sandwiches are just the trick. Cute, delicious, and easy – seriously, what else can you ask for?
There are only 3 ingredients here – so it’s quick, delicious and nutritious!
To keep the apples from turning brown in your kids’ lunchbox, dip the apple slices in a solution of equal parts of lemon juice & water before assembling the sandwiches. Once the sandwiches are ready to go, wrap them in plastic wrap to further prevent any browning.
All you need is:
- your favorite kind of apple – cored, & sliced into rings
- peanut butter
- granola
Spread some peanut butter on an apple ring. Sprinkle on a little granola. Top with another apple slice.
And…. You’re done! Totally easy, and extra special!

Any juice with vitamin C will work, so I use apple juice, as it doesn’t affect the flavor. (My daughter and I have very sensitive palates!)
What a great idea this is!! Unfortunately my children’s school is a nut free school. ;-( Any suggestions to substitute the peanut butter?
I often make these with sunbutter. Just as delicious.
