I often joke on my blog about the secret love affair I have with my crockpot. For busy families, it’s the best kitchen appliance you can own! In the morning, I prepare the ingredients, turn it on low, then come home to a great smelling kitchen and dinner ready & waiting to be eaten. Yum!
I make this recipe gluten free for my daughter by using GF bread crumbs and seasonings. I also serve hers on a GF bun and she is in seventh heaven! This recipe left our family feeling stuffed with plenty of leftovers. Mom scores again!
Yields about 2 1/2 dozen small meatballs
Ingredients
- 1 lb. of ground chicken (or ground turkey)
- 1/2 cup of bread crumbs
- 1 can of Italian style diced tomatoes
- 1 large egg, lightly beaten
- 2 tbsp. of Italian Herb seasoning
- 1 tsp. of garlic salt seasoning
- 1/4 cup of grated Parmesan cheese
- 1/2 an onion, diced
- 1 - 24 oz jar of pasta sauce (or homemade)
- 1 cup of shredded mozzerela cheese
Directions
- Place the diced onion evenly on the bottom of the crockpot.
- In a large bowl, mix together your ground chicken or turkey, bread crumbs, egg, seasonings, and Parmesan cheese.
- Roll mixture into approximately 1.5" diameter balls (golf balls) and begin to place evenly, and stack, in your pot.
- Pour half the can of diced tomatoes over the meatballs.
- Pour enough pasta sauce over the meatballs, just to cover them. About half a jar.
- Cover and cook on low for 6-8 hours.
- Ten minutes before serving: on your stove-top in a medium size sauce pan, heat your remaining pasta sauce and diced tomatoes together.
- Add 1 cup of shredded mozzarella cheese and let melt into the sauce, on medium-low
- Slice your sub rolls/ buns. Scoop desired amount of meatballs into roll then add cheesy pasta sauce from stove. Sprinkle additional cheese or Parmesan on top, if desired.

I kind of have an embarrassing question… Where do I find ground turkey? I’ve never seen it before but I’ve been dying to start substituting it for ground beef!
At the grocery by the ground beef.. Usually between the beef and chicken section. Ask your butcher if you can’t find it. Glad you asked! :)
