Picking apples in the fall is a favorite past time for my family. There are so many wonderful orchards and apple farms where I live.
Baking with the apples we’ve picked is an even more enjoyable experience. What better way to incorporate them into a recipe then with this simple fruit and cinnamon filled treat.
Great for breakfast with yogurt, or serve it warm for dessert with a scoop of ice cream.
This recipe can easily be made dairy free by using a non-dairy butter substitute. I make mine with a lactose-free coconut spread adding and extra element of deliciousness.
Since it doesn’t have to be eaten warm, it’s delicious inside the lunchbox at room temperature.
Ingredients
- 3 plums - diced into 1/2" pieces
- 3 large apples - peeled, cored, and diced into 1/2" pieces
- 2 TB of apple juice
- 1/2 tsp of salt
- 1-1/2 tsp of ground cinnamon, divided
- 1 TB of all-purpose GF flour
- 1-1/4 cups of GF rolled oats
- 4 TB of room temperature butter, or substitute
- 2 TB of melted butter, or substitute
- 1 tsp of vanilla
- 1/4 cup of white sugar
- 2 TB of brown sugar
Directions
- Preheat oven to 375 degrees. Grease an 8x8 baking dish.
- In the dish, toss apples, plums, and apple juice.
- In a medium size bowl, stir together white sugar, salt, 1 tsp of cinnamon, and flour. Pour over apple and plum mixtures inside the dish. Toss again.
- In the same medium size bowl used above, add oats and 2 TB of melted butter. Toss and coat.
- Add 1/2 tsp of cinnamon, 2 TB of brown sugar, and 4 TB of butter and mix until butter is broken down into tiny ball amounts.
- Evenly coat and pat down oat mixture over apples and plums.
- Bake until oats are golden brown and apples are tender. Approximately 50-60 minutes.
