At MOMables we are always coming up with fresh new ways to introduce healthy foods into lunches.  We plan, you make, they eat.

We love these corn cakes because black beans pack a lot of fiber and protein. They are filling, give lasting energy and pack a lot of nutrition our kids need -like vitamins, minerals and antioxidants.

But, who wants to eat plain beans for lunch? These corn cakes taste great at room temperature and are very easy to pack for lunch!

Pictured, the corn cakes are topped with sour cream, cheese, salsa, and diced chicken breast to create a delicious mexican inspired dish for lunch!  You can, however, put all items on the side and let your child “dip.”

 

 

 

Lunchbox Black Bean Corncakes

Ingredients

  • 1 - 15oz can of black beans, with liquid
  • 2 Tbsp of lime juice
  • 1 cup (or 8oz package) of cornbread or corn muffin mix, dry
  • 3/4 cup of salsa
  • Optional Toppings: salsa, sour cream, cheese, diced chicken, corn, avocado

Directions

  1. In a medium bowl, mash beans slightly then add salsa, lime juice, and corn mix. Mix well.
  2. On the stovetop, lightly spray your skillet with cooking spray and heat to medium.
  3. Spoon 1 Tbsp size portions of the batter into your pan, cooking similar to a pancake. Cook 2-3 minutes then flip the cakes and cook for an additional 2-3 minutes.
  4. Yields approximately 20 corncakes

    Would using plain cornmeal work in place of the cornbread mix? Thanks. Love your site.

      If you want to use cornmeal you need to do the following: 1/2 cup cornmeal, 1/2cup flour 1/2tsp baking powder, 1/2 tsp sugar. If you have gluten allergies you can substitute the 1/2 cup of flour for 1/2 cup gf all purpose flour mix.

  4. This is a great idea. I’m hoping my toddler with food allergies loves this. I’m going to use Wegmans’ cornbread mix. Hoping it will turn out well!
