The school year tends to create a routine of carpool, homework, afterschool activities and of course, packing lunches. We call this a “routine” because that is what we do, the same thing, day after day for 9 months of the year.

In the same token, we have to pack school and office lunches day after day. While it’s important to establish a routine with our schedule, that doesn’t mean we need to get stuck eating the same things all the time.

Chicken Salad is a lunchtime favorite of mine, and recently, my kids have started to enjoy it as well. But who wants to eat a chicken salad sandwich every day? Not us! In this quick video, you’ll see how simple it is for you to make a variety of lunches with classic chicken salad.

Here’s another recipe to add to your lunch recipe list – Avocado Egg Salad Sandwiches! They’re healthy, filling, and perfect for kids & adults alike. I love avocado and its nutrition, so I try to add it in our diet as much as I can. These sandwiches use avocado to replace the mayo used in traditional egg salad. I’d say that’s a healthier swap!

This avocado egg salad is vegetarian, gluten-free, and grain-free. Serve it on allergy-friendly bread if needed, or even in lettuce wraps! I love to pack it with fruit and nuts for a well-balanced lunch I feel good about sending my kids with. Enjoy!

Avocado adds lots of creaminess and nutrition to this vegetarian & gluten-free Avocado Egg Salad Sandwich! It’s great for a healthy school or work lunch.

Ingredients

  • 6 hard-boiled eggs
  • 1 ripe avocado, peeled and pitted
  • 1 tablespoon Greek yogurt (or any plain yogurt)
  • 1 tablespoon lemon juice
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon pepper, plus more to taste
  • 8 slices bread

Instructions

  1. Peel and roughly chop the hard-boiled eggs. To cook perfect hard-boiled eggs, learn how here.
  2. In a medium bowl, add avocado. Mash until completely smooth. Add yogurt, lemon juice, mustard, salt, and pepper; stir to combine. Add eggs; stir until ingredients are thoroughly mixed.
  3. Add a scoop of egg salad to 4 slices of bread; top each with another slice of bread to form 4 sandwiches.
  4. Pack in an airtight container or lunchbox for lunch with fruit, nuts, or crackers.

The idea of a burrito bowl isn’t anything new.  I happen to love them, especially when traveling.  It’s a convenient way to eat well, while I’m on the go, or need a night in for work.  So why not enjoy the same convenience at home?

One of the reasons I love to make my own burrito bowls at home is because I can prep ahead for nights when we need a quick and easy dinner.  Simply cook your rice, wash the beans, shred the cheese and chop any additional toppings your family will enjoy. Just look at how easy they are to make!

The best part about making burrito bowls for dinner is that they make great leftovers for your lunchbox!  Create a burrito bowl unique to your child’s taste, or even better, have them help. If you don’t have access to a microwave, you can layer your warmed ingredients inside a thermos.

Lunch Box Burrito Bowls

Ingredients

  • For the bowls:
  • 2 cups rice, uncooked
  • 1 Rotisserie chicken
  • 8 ounces salsa
  • Toppings: Black beans (optional)
  • 1 ½ cups shredded cheddar cheese
  • Guacamole
  • Sour cream

Instructions

  1. Cook rice according to package directions on the stovetop or rice cooker.
  2. Prepare your burrito bowl toppings by transferring them into bowls.
  3. Heat your rotisserie chicken and shred the meat, using two forks and on a cutting board, into smaller pieces.
  4. Fill serving bowls with cooked rice, top with shredded chicken, salsa, and desired toppings to build 6 bowls.
  5. For a grain free bowl, use shredded lettuce instead of rice.
