Cookies for breakfast. It’s a thing. Blueberry Breakfast Cookies? Even better.

The thing is, that with hectic mornings come quick and convenient decisions for breakfast -like grabbing a pre-packaged sugary bar and calling it a meal. But these blueberry breakfast cookies are super easy to make and can be made ahead of time, which now makes them just as convenient.

Of course, I’m not saying that making a hot breakfast like Homemade Whole Wheat Waffles or an Oatmeal Breakfast Bar or Homemade Egg McMuffins are not good options, but the reality is that kids LOVE cookies -ok, and me too!

And we parents want our kids to eat nutritious foods, so this recipe is a win-win. The kids love that it’s a cookie and we parents love that it’s nutritious.

What is your kids’ favorite breakfast? Mine love scones, eggs & toast, and oatmeal, but nothing makes them happier in the mornings than a big stack of fluffy pancakes!

Usually we only get to enjoy pancakes on the weekends because they’re a bit time-consuming, but this recipe for gluten free blueberry pancakes couldn’t be simpler! They require just a handful of simple ingredients you may already have in your kitchen. Plus, they’re gluten-free and vegan/vegetarian, so the whole family can enjoy a stack!

Our favorite pancake toppings are fresh fruit, peanut butter, and (of course!) maple syrup. What does your family like on their pancakes?

Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1 tablespoon ground flaxseed (flax meal)
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons maple syrup (or sugar or honey)
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened applesauce
  • 1 cup milk (or non-dairy substitute)
  • 3/4 cup blueberries (fresh or frozen)

Instructions

  1. Grease a griddle, and preheat over medium heat. (Or you can use a pan on your stovetop.)
  2. In a medium mixing bowl, sift together the flour, flax meal, baking powder, cinnamon, and salt.
  3. In a separate bowl, combine the maple syrup, vanilla, applesauce, and milk. Slowly pour the liquid into the dry ingredients, stirring continuously. Mix until you get the lumps out of the batter. Gently fold in the blueberries.
  4. On your griddle, begin to cook the pancakes, using about 1/4 cup of the batter for each one.
  5. Cook for 1 to 2 minutes, until they start to bubble around the edges and flip. Cook for another 1 to 2 minutes. Remove from the griddle, and serve. Top with blueberries and maple syrup.

Notes

Not all gluten-free all purpose flours are the same. You may need to add an extra tablespoon or two of flour to get the right texture.

One of my favorite things about summer is all the fresh berries available. Especially here in Louisiana, where locally grown strawberries are ruby red and juicier than any fruit you’ll ever try. It makes me even more thankful to live in a place with such tasty food!

Since summer is basically just a time for me to figure out how to eat the most amount of berries I possibly can, I have to get creative with recipes. My favorite? Smoothies! I love freezing fresh berries and throwing them in the blender for creamy, refreshing smoothies.

This Triple Berry Smoothie is one of our favorites right now! Berries are a great source of antioxidants, so we have three types of berries in here for the nutrition punch. And the tastiness. :) Greek yogurt adds protein and creaminess, and you can even add a handful of spinach for extra nutrients.

Ingredients

  • 1 banana, frozen
  • 1 cup milk or water
  • 1/2 cup Greek yogurt
