Grain Free Pancake Muffins

Ingredients

  • ½ cup plain whole milk yogurt
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon honey (or maple syrup)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon apple cider vinegar
  • 1 ¾ cups blanched almond flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt 3 large eggs
  • Optional: ½ cup blueberries or strawberries

Instructions

  1. Preheat oven to 350F and line muffin pan with 8 liners.
  2. Place yogurt, melted butter, honey (or maple syrup), vanilla, and apple cider vinegar into a blender.
  3. Blend just until combined.
  4. Add almond flour, baking soda, and salt to the wet mixture and blend.
  5. The batter will be very thick, so you might need to wipe the sides with a spatula.
  6. Add the eggs to the thick batter and blend, just until everything is combined. If you over mix, the muffins won’t be tender.
  7. If you are adding blueberries to these muffins, transfer batter into a bowl and fold in the berries. Then, distribute batter evenly into the 8 muffin cups.
  8. Bake in the preheated oven for 18 minutes, until the tops are golden brown and a toothpick comes out clean.

Ingredients

  • 6 eggs
  • 3 tablespoons milk
  • 1 cup of your choice of pizza toppings, chopped
  • 1 cup shredded mozzarella

Instructions

  1. Preheat oven to 350 degrees and grease 24 count mini muffin pan.
  2. In a large bowl, whisk eggs and milk.
  3. Add in chopped pizza toppings and shredded cheese.
  4. Mix to combine all ingredients.
  5. Distribute egg mixture evenly into muffin pan cups.
  6. Bake for 15-18 minutes.
  7. Allow mini quiches to cool in pan before carefully removing with a small knife or spatula.

These simple, homemade Egg McMuffins take a little make ahead prep, but you’ll be so glad to pull these delicious sandwiches out of the freezer on hectic mornings.

Homemade Egg McMuffins

Ingredients

  • 6 English muffins, sliced in half
  • 6 large eggs
  • 6 slices Cheddar cheese
  • 6 slices deli ham
  • Salt and freshly ground black pepper

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease 5 ramekins, or a jumbo muffin tin and place on a cookie sheet.
  3. Crack one egg into each ramekin.
  4. Pierce egg yolk with a fork and very slightly beat.
  5. Season with salt and freshly ground pepper.
  6. Bake eggs for 12-15 minutes or until set.
  7. Remove from oven and allow to cool.
  8. Run a knife around the edge of ramekin (or muffin tin) to remove eggs.
  9. To assemble breakfast sandwich, layer one half of each English muffin with one slice of cheese, one slice of ham and a cooked egg.
  10. Top with other half of English muffin.
  11. Wrap sandwich in plastic wrap and place in the freezer.
  12. To reheat, place in microwave for 1-2 minutes, or until warmed through.

These delicious strawberry filled French Toast Roll Up  are perfect for the not-so-fresh-bread leftover from the week!

Mornings can be a busy time of the day.  As moms, we want to send our kids into the day with bellies full of good food to power their bodies and brains through the morning, but breakfast can often be an obstacle to getting out the door. These french toast roll ups can be prepped ahead of time, and frozen.  When you are ready to use, pull out the roll ups, dip them in egg wash and cook in a skillet.  Finish them off with a sprinkle of cinnamon sugar and you’ll have a warm breakfast to go that your kids will love!

Strawberry French Toast Roll Ups

Ingredients

  • 8 slices sandwich bread, crusts removed
  • 1/4 cup whipped cream cheese
  • 1 cup strawberries, diced
  • 2 eggs
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter, for cooking
  • 2 tablespoons sugar
  • 1/2 teaspoons ground cinnamon

Instructions

  1. On a flat surface, flatten sandwich bread with a rolling pin.
  2. Spread 1 1/2 teaspoons of cream cheese onto each slice of bread.
  3. Place 1 tablespoon of diced strawberries along the edge of each piece of bread.
  4. Carefully, roll up bread tightly.
  5. In a shallow dish, beat eggs, milk and vanilla.
  6. Dip each bread roll in the egg mixture and place 3-4 of them in a butter greased skillet, over medium heat, seam down.
  7. Cook 3 minutes or until golden brown and flip.
  8. Cook other side for an additional 1-2 minutes and remove from pan.
  9. In a shallow dish, combine sugar and cinnamon.
  10. As french toast rolls come out of the pan, lightly dust with cinnamon sugar and serve.

Ingredients

  • 16 ounce bag of broccoli florets, thawed
  • 3 eggs
  • 1 cup bread crumbs
  • 1 cup shredded sharp cheddar cheese
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375 degrees.
  2. Place broccoli florets inside a food processor and pulse until finely chopped.
  3. Add eggs, breadcrumbs, cheese and seasoning to veggie mixture. Process a few pulses until every combined.
  4. Using a small cookie scoop, place veggie nugget scoops onto a parchment lined baking sheet. Gently press them down so all nuggets are the same height.
  5. Bake for 20-25 minutes until the tops are golden. Remove from the oven and allow them to cool slightly prior to serving.
  6. Store leftovers in an airtight container and refrigerate up to 3 days.
