Pizza for breakfast? Yes please! Especially when it’s a healthy pizza that’s made in 20 minutes, gluten-free, vegetarian, and can be vegan. It’s a breakfast everyone will love!

With school fast approaching, I’m on the hunt for easy breakfast recipes (like these back to school breakfast ideas!) that my kids will be excited about and devour without any complaining. Easier said than done, right? Their favorite recipes take too long to make on weekdays, so I came up with this easy fruit and yogurt breakfast to serve before school. They love it!

This breakfast pizza is made with just a few simple ingredients you probably already have. The best part – you can customize with your favorite yogurt (non-dairy if needed!) and your favorite fruit. It’s a guaranteed hit with the whole family.

Here are some tips to make this easier for school mornings:

  • Make the crust the night before, and then layer with yogurt and fruit in the morning.
  • Have the fruit pre-chopped to save time.
  • Get your kids to help you layer the yogurt and fruit! They’ll have fun being hands-on, and you can get another task done in the meantime.

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup mixed nuts and seeds, finely chopped (almonds, cashews, walnuts, pecans, sunflower seeds, pumpkin seeds, etc.)
  • 2 tablespoons unsweetened shredded coconut
  • 1/4 cup coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups yogurt (Greek yogurt, non-dairy, etc.)
  • Assorted chopped & sliced fruit (bananas, blueberries, strawberries, kiwi, peaches, oranges)

Instructions

  1. Preheat oven to 350F. Lightly grease a pie pan or springform pan.
  2. In a large bowl, add oats, nuts & seeds, and coconut. Stir to combine.
  3. Add the melted oil, maple syrup, vanilla, and salt. Stir well until all ingredients are mixed together.
  4. Pour the mixture into your pan. Using your hands or the back of a wooden spoon, press the mixture firmly into the pan and up the sides.
  5. Bake for 15 minutes, until lightly golden. Let cool. (Stick it in the freezer to cool faster).
  6. Spread the yogurt on top of the crust; decorate with you favorite fruit. Slice & enjoy!

I’m a huge fan of breakfasts that taste like dessert. Who isn’t?! Anything from decadent oatmeal to scones to chocolate pancakes is a great treat in the morning to get our day started on a good note. I know that when I serve up something sweet (but still nutritious), the whole family will love it.

This Chocolate Peanut Butter Banana Oatmeal Shake is a new addition to our sweet breakfast line-up, but it’s already a favorite! I’m a huge fan of smoothies since they’re quick to make and easy to take with us on-the-go. You could double or triple this recipe to feed the whole family one morning!

Ingredients

  • 1 banana, frozen
  • 1 cup milk of choice
  • 1/4 cup old-fashioned rolled oats
  • 3 tablespoons natural peanut butter*
  • 1 tablespoon cocoa powder
  • Chocolate chips, for serving (optional)

Instructions

  1. Place all ingredients in a blender or food processor. Blend until smooth, adding more liquid if needed.

*If you’re allergic to peanuts, use your favorite nut or seed butter.

Is there anything better than juicy watermelon in the summer? My kids and I look forward to this time of year so we can dig into a big bowl of watermelon on hot days by the pools. I don’t think there’s any other fruit more juicy and refreshing!

We love making this Real Homemade Icee in the summer, so I wanted to try something similar with watermelon. The result? A naturally sweet, delicious treat similar to an icee or a slushy. The best part is that you only need one ingredient: frozen watermelon! Oh, and water – but that doesn’t count. ;)

I also love this recipe because there’s no added sugar, just fruit. I always try to give my kids treats that are tasty but also healthy. This easy watermelon icee is definitely one of our go-to snacks for the summer!

After making the watermelon icee, you’ll want to serve immediately as it will melt. IF you have leftovers (which we never do), you can return the extra mixture to an airtight container and store it in the freezer. When you want to enjoy it, just pop it out for about 5 minutes to thaw. Then dig in!

One of my favorite parts of summer is having family & friends over to enjoy good food and each other’s company. I’m a true entertainer at heart! I love to serve up delicious eats and spend time with the ones I love. There is no better time of the year to do this than summer – the weather is beautiful, the food is fresh, the kids are out of school, and everything is just better. Agreed?
