My family loves breakfast food! We eat breakfast for dinner at least once a week and there are never any complaints. Some of our favorites breakfast items include; homemade bread, mini omelets, breakfast quesadillas, pancakes and last but certainly not least…muffins.

Before getting with the program, and before the days when I really examined food labels, I was totally guilty of making muffins from a box. This is how naïve I was…I figured that even though I knew that in general baked goods aren’t great for you, that because I was buying blueberry muffins, that it couldn’t be that bad. After all, my muffin box had a delicious looking picture on the front of big luscious blueberries on it. Certainly that’s what I was going to be getting upon purchasing it.


Those were my thoughts until one day I examined that box closer.  Big juicy blueberries were on the front, but when I turned the box around they disappeared. I looked at the ingredient list and found that “blueberries” were nowhere to be found on that list. I did however find a lot of sugars, artificial colors and oils. How could this be? There is no way that a company could claim that a product of theirs contains blueberries when in fact it really doesn’t, right? Wrong! This isn’t to say that no packaged foods are made with real ingredients, but you do need to be careful and be an informed consumer.

Since those findings, I have experimented with numerous homemade muffin recipes. I found that making homemade muffins really doesn’t even take much more time that preparing a box mix. Not to mention they are ultra portable and great for families that are on the go.

They are also the perfect treat inside the lunch box!

What you’ll love about this particular recipe for oatmeal banana muffins is that they are made with oatmeal, making the super filling. They also contain no flour, butter, or oil. This is a recipe the whole family is sure to enjoy!

  • 2 large ripe bananas
  • 2 1/2 cups old-fashioned oats
  • 1 cup plain low-fat Greek yogurt
  • 2 large eggs
  • 1/3 cup honey, or sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda


  1. Preheat oven to 400F. Line a muffin pan with waxed paper or foil liners or, grease it so muffins don’t stick.
  2. Inside a blender, place banana, yogurt, eggs, honey, baking powder, and baking soda. Blend until smooth.
  3. Divide batter among cupcake liners, and bake for 18-20 minutes, or until a toothpick comes out clean.
