Pumpkin season is in full swing over here! With the cooler weather comes lots of comforting, hearty dishes, hot chocolate, cozy movie nights, and of course, lots of pumpkin! We can’t stop eating this healthy pumpkin cookie dough dip right now; it’s perfect with fresh fruit! I had to make another pumpkin creation for the family to enjoy.

What happened was these Pumpkin Pie Overnight Oats. I’d say it was a great idea!

Oats are already a healthy breakfast option (especially for those who are gluten-free), and pumpkin just adds even more nutrition! It’s full of vitamin A for healthy eyes, beta-carotene, and fiber. Mixed with some cinnamon, pecans, and a drizzle of molasses, it’s the perfect fall addition to your morning bowl of oats. Plus, all you have to do is mix everything the night before, wake up, and dig in!

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 1/4 cups milk or non-dairy alternative
  • 1/4 cup pumpkin puree
  • 2 tablespoons maple syrup
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger (optional)
  • Optional toppings: pecans, molasses, Greek yogurt

Instructions

  1. In a medium bowl, add all ingredients except toppings. Stir to combine.
  2. Place in the fridge and let sit overnight, or at least 4-5 hours.
  3. Divide into two bowls or jars in the mornings, top with desired toppings, and enjoy!

Ingredients

  • 1 cup pineapple, diced
  • 2 Roma tomatoes, diced
  • 1/4 red onion, diced
  • 1 jalapeno, seeds moved and diced
  • 1 green bell pepper, diced
  • 1/4 cup cilantro, finely chopped
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • Salt and pepper

Instructions

  1. In a medium bowl, add all ingredients. Stir to combine; season to taste with salt and pepper.

For those who are gluten- or grain-free, this is such an amazing replacement for bread in lunchbox sandwiches! Even if you eat bread, it can be a great way to get your kids to eat more healthy sweet potatoes.

So how exactly do you make sweet potato toast? Simply cut your potato into 1/4-inch slices and pop them in the toaster a couple times. It’s that easy! Then you can get creative with your toppings – we went with banana & peanut butter, but you can also do egg salad or avocado or even chocolate spread for a sweet treat!

Ingredients

  • 1 medium sweet potato
  • 1/4 cup peanut butter
  • 1 banana, sliced

Instructions

  1. Cut the ends off of the sweet potato. Slice it lengthwise into 1/4-inch thick slices so that you have 4 slices.
  2. Place slices into a toaster. Toast on high for 2-3 times until the outsides are lightly browned and the inside is cooked through. Repeat with the other two slices.
  3. Spread 1 tablespoon onto each slice. Top with banana slices; close to form two sandwiches.

My kids LOVE bite-sized foods. I mean, who doesn’t? We enjoy everything from bite-size no bake chocolate bites to one of our favorite recipes, spinach and bacon mini quiches. For some reason, it’s so much easier to get my kids to try new foods when they’re in small bites. Everything is better when it’s mini!

Another great thing about bite-sized foods is that they’re super easy to pack in a lunchbox. These Mini Quinoa Pizza Bites are yet another fun-sized food that my kids can’t get enough of! My kids love pizza, so I took all the familiar flavors and used them to introduce another healthy food into my kids’ diet: quinoa! It’s a gluten-free food that’s packed with protein and nutrients. Score!

You can customize these with your family’s favorite pizza toppings – we used olives, spinach and peppers. These are great for meal prepping at the beginning of the week to have lunch ready to go! Of course, don’t forget to pack the pizza sauce for dipping. That’s the best part!

Ingredients

  • Cooking spray
  • 1 cup cooked quinoa
  • 1 cup shredded mozzarella cheese
  • 1 cup of your favorite pizza toppings, chopped (pepperoni, olives, peppers, onions, spinach, ham, etc.)
  • 1/4 cup tomatoes, chopped
  • 1 egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pizza sauce, for dipping

Instructions

  1. Preheat oven to 350F. Lightly grease a 24-count mini muffin panwith cooking spray (or make 2 batches in a 12-count pan).
  2. In a large bowl, add all ingredients except pizza sauce. Stir until all ingredients are mixed well.
  3. Scoop mixture into each mini muffin cup; fill to the top of each.
  4. Bake for 20-25 minutes. Let them cool in the pan for 10 minutes before removing.
  5. Pack pizza sauce in a separate container in a lunch box for dipping.
