During the summer months, however, boiling water on the stove is not appealing because it heats up the whole kitchen. This is where the slow cooker comes in! This recipe is so easy—a real “fix it and forget it” recipe—and great for making ahead for those busy weeknights!

I simply add butter to the kids’ corn and season the ones for my husband and me with coconut oil, garlic salt, and pepper. I stack the corn on the cob with the most seasoning on the bottom of the crockpot and let the “plain” ones sit up top so the seasoning does not accidentally mix.

Not enough time to prep the corn the same day? Simply husk and wash the corn the day before, add butter/oil, and seasonings, wrap in foil, and grab them the next day and throw them in the slow cooker!

  • 6 ears corn
  • 4 tablespoons butter or oil
  • Seasonings of your choice


  1. Husk and wash the corn.
  2. Place each ear of corn on a piece of foil, and top it with 1/2 tablespoon of butter or oil.
  3. Add your desired seasonings.
  4. Wrap in foil, and place in the slow cooker.
  5. Cook on LOW for 4 to 5 hours, or on HIGH for 2 to 2 1/2 hours.

Rice makes such a great, quick and easy side dish. Unfortunately, many struggle to get the results they’re looking for when making rice: tender, fluffy, and not sticky or gooey.

What often happens is that families resort to instant rice from a box because it just isn’t working out. Of course, another easy answer to this problem would be to purchase a rice cooker. If you are like me then that option just isn’t in the budget.

I’m here to share some tips on how to make perfect rice that doesn’t involve an instant box mix and doesn’t require a special appliance.

  • There are many different varieties of rice, make sure you are cooking with the right kind of rice for the result you are after. I typically use long grain white rice.
  • Rinse rice with water before cooking. Rinsing rice actually rids the grains of surface scratches, and prevents clumping.
  • If you are cooking 1 cup of rice, use 1-3/4 cups of liquid. A common misconception is that it is 1 cup of rice, 2 cups of water- this is incorrect. The 1:1 ¾ ratio is especially helpful in producing fluffy rice.
  • You don’t have to cook the rice in plain water. Depending on what you are making it for, you may want to consider cooking your rice in chicken or vegetable broth or beef stock, as it adds more flavor to the rice.
  • Follow the cooking instructions carefully (either what is on the packaging or as instructed in the recipe). While cooking, lift the lid as seldom as possible. Many think it is good to stir the rice frequently while cooking, but this actually disrupts the cooking process.
  • Once the rice is cooked and tender, remove the pan from the heat, but keep the lid on. Let it sit this way for approximately 5-10 minutes.
  • Fluff the rice with a large fork and let any resident moisture evaporate out.

Now you’re ready to dig in!I promise, you’ll never want to go back to a box of instant rice again!

Cauliflower has always been one of my favorite vegetables; this low-calorie veggie is an excellent source of vitamins C and K, as well as antioxidants and fiber.

If you have picky eaters, it’s easy to sneak in because it’s crunchy, doesn’t have a strong flavor, and it’s not green!

I’ve been making this particular pasta salad since I was a teenager because it was easy to make with my then-limited kitchen skills. The concept is similar to that of macaroni and potato salad; it has simple ingredients and is always more delicious after being chilled for at least 2 hours.

I even make a gluten-free version of this recipe now, using corn or quinoa noodles. It’s easily adaptable to meet your gluten-free needs.

This recipe yields approximately 10 to 12 half-cup servings.

  • 2 cups uncooked macaroni noodles or noodle of choice
  • 2 cups diced cauliflower pieces, about 1/2-inch bites
  • 1 large carrot, grated
  • 1/2 cup mayonnaise or whipped salad dressing
  • 1 cup canned, drained sweet peas or frozen sweet peas, thawed
  • 2 tablespoons Zatarain’s Big & Zesty Garlic & Herb Creole Seasoning, or other Italian Herb Seasoning
  • Optional add-ins: crispy bacon pieces, diced ham, diced sweet red pepper


  1. Cook the pasta per the package directions. Rinse, cool, and set aside.
  2. In a large bowl, mix together the noodles, cauliflower, and carrot.
  3. Add the mayonnaise, and mix until the noodles and vegetables are coated.
  4. Add in the peas and seasonings, then lightly mix once more. Add optional ingredients, if using.
  5. Cover and refrigerate for approximately 2 hours. Serve.
