What I love about today’s recipe is that the slow cooker does all the heavy lifting (cooking) while you go on about your day. Dinner can cook while I run the kids to swim practice, art class, or karate!

As a busy mom to 3 young kids, I appreciate when one of my friends shares with me strategies that work with the kids, especially when it comes to making mealtimes less of a struggle and making sure my kids get enough of the nutrition for the day. This veggie tomato soup is a great way to fill my kids with veggies and giving them something they love at the same time, grilled cheese!

By cutting the grilled cheese into strips and using them as dippers, my kids forget they are eating soup that is loaded with the extra nutrition they need for lunch or dinner.

Ingredients

  • 1 tablespoon (15 ml) olive oil
  • 1 red bell pepper, diced
  • 2 medium carrots, diced
  • 1 zucchini, diced
  • 1 rib celery, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 3 – 28-ounce cans crushed tomatoes or puréed tomatoes
  • 2 cups vegetable stock

Instructions

  1. Add all ingredients inside a slow cooker. Cook for 6 hours on low.
  2. Prior to serving, insert an immersion blender and blend until smooth, or blend in smaller batches and serve.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs
  • 4 large carrots, peeled and chopped
  • 1 medium yellow onion, diced
  • 2 ribs celery, chopped
  • 3 cloves garlic, minced (or 1½ teaspoons dried)
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1 bay leaf
  • 6 cups low-sodium chicken stock or broth
  • 1 cup water
  • 2 cups uncooked pasta (wide egg noodles, spaghetti, or fusilli – gluten-free, if needed)

Instructions

  1. In a large Crockpot (6-quart), place all the ingredients minus the pasta. Cook for 6 hours on low heat, or 4 hours on high.
  2. After 4 or 6 hours (depending on temperature setting), remove the chicken and chop to bite-size pieces. Place the chicken back in the Crockpot.
  3. Add the pasta, turn the heat up to high, cover, and cook for another 15-20 minutes, until pasta is tender.
  4. Discard the bay leaf, and serve soup immediately.

Notes

You can also use leftover chicken that is already cooked. Follow the recipe as is.

Easy Crockpot Cheesy Potato Soup

This cheesy crockpot potato soup is one of those one-pot wonder soups that hits the spot! Bonus: the whole family will love it!In many parts of the country, springtime is full of rain and fluctuating weather. One day it’s 70 degrees, the next it can be in the 40s.

On those cool, rainy days, there’s nothing we love more at our house than a bowl of soup. Especially when I can cook it in my beloved crockpot!

Slow-cooker meals are my favorite—there’s something so great about being able to throw the ingredients in, walk away for a few hours, and BAM! Dinner is served.

Below is an easy crockpot recipe for this cheesy potato soup. Ditch the canned stuff, and let’s get real!  You can jazz it up by adding real bacon bits and chives (or dill as pictured).

Easy Crockpot Cheesy Potato Soup

Ingredients

  • 1 32-ounce bag Southern-style potatoes (diced potatoes), thawed
  • 32 ounces low-sodium chicken stock
  • 1 cup water
  • 1/2 medium onion, diced
  • 1/4 cup celery, diced (about 2 ribs)
  • 3 tablespoons flour
  • 1 cup milk
  • 8 ounces shredded Cheddar cheese
  • Optional garnishes: real bacon bits, chives, dill, or green onion

Instructions

  1. Coat the crockpot with cooking spray.
  2. Add in the potatoes, chicken stock, water, onion, and celery.
  3. Cook on low for 6 to 8 hours.
  4. One hour prior to serving, in a small bowl, mix together the flour and milk. Whisk until blended, then add to the pot, and stir.
  5. Change the crockpot temperature to high, and let it thicken for 20 to 30 minutes. It will look cloudy. After the 20- to 30-minute period, the soup should be thickening.
  6. Return the temperature to a low setting. Add the Cheddar, and stir into the pot.
  7. Let the soup cook for an additional 20 minutes. The cheese will melt, and the soup will continue to thicken.
  8. Serve hot, and top with garnishes, if using.

Crockpot Love: Cheesy Italian Tortellini

Ingredients

  • 1 pound mild ground Italian sausage (optional)
  • 15 ounces tomato sauce
  • 1 cup fresh mushrooms, sliced
  • 14 ounces diced tomatoes with Italian herbs, with liquid
  • 1 teaspoon Italian seasoning blend
  • 9 ounces refrigerated cheese-filled tortellini
  • 1 cup shredded mozzarella cheese
  • Parmesan cheese

Instructions

  1. In a medium skillet, cook the sausage, if using, over medium heat until browned. Drain the excess fat and set aside.
  2. Coat the inside of your slow cooker with cooking spray. Place the cooked meat, tomato sauce, mushrooms, and diced tomatoes inside the crockpot. Give the mixture a quick stir, and cook on high for 4 hours or on low for 6 to 7.
  3. In the last half hour (if cooking on high) or the final hour (if cooking on low), check for seasoning, then add in the tortellini and mozzarella. Give everything a quick stir, cover, and continue cooking.
  4. Sprinkle with Parmesan cheese and serve.

Notes

This recipe serves 6 with sausage, 4 without.
