Summer is so close, we can almost taste it! Literally – these delicious recipes are perfect for hot summer days and sharing with the whole family.

What do your kids enjoy eating during the summer? Even though we continue to pack lunches for summer camps, we love to make fun snacks that are refreshing, fruity, and healthy. Strawberries are so fresh during the summer, so we love using those in our healthy snacks. And of course, ice cream and popsicles are some of our favorite treats!

When time allows, I love to make some homemade snacks at the beginning of the week for my kids to munch on. That way, instead of reaching for the chips in the pantry (which are an occasional treat), I can tell them to grab the snacks that I’ve made – which are always healthier than anything you can get at the store!

It can be as simple is prepping some veggies with ranch or making no-bake bites, but I like to go above and beyond when I can. Enter this bread – the perfect treat for after school! My kids love this Peaches and Cream Bread almost as much as my famous blueberry bread from The Best Homemade Kids’ Lunches on the Planet. Like I said, it’s hard to keep a loaf around for more than a day or two.

I love when my kids help me bake this bread; the moments we spend in the kitchen together are some of my favorite. I hope you get to make this Peaches and Cream Bread with your kids and make them very happy when snack time comes around!

Peaches and Cream Bread

Ingredients

  • 1 1/2 cups (218 g) peaches, diced fresh or frozen
  • 1 1/2 cups + 1 tablespoon (196 g) all purpose flour, divided
  • 2 teaspoons (9 g) baking powder
  • 
1/2 teaspoon (3 g) salt
  • 1 cup (230 g) plain yogurt
  • 1 cup (200 g) sugar
  • 3 large eggs
  • 
2 teaspoons orange zest (from 1 large orange)
 -optional
  • 1 teaspoon (5 ml) vanilla extract
  • 1/2 cup coconut oil
 (120 ml), in liquid form

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 9×5″ loaf pan, dust with flour, and tap out excess. Alternatively, you can line loaf pan with parchment paper.
  2. In a small bowl, mix diced peaches with 1 tablespoon of flour. Using your hands, toss them around until they are all evenly coated with flour. This helps prevent them from sinking to the bottom of the pan when baking.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, or the bowl of your stand mixer, mix yogurt, sugar, eggs, orange zest, vanilla, and coconut oil on low speed until all items are thoroughly combined.
  5. Slowly add the flour mix to the wet, making sure there are no clumps but careful that you don’t over mix. Gently fold flour-coated peaches into the batter.
  6. Pour the batter into the pan and bake 50-55 minutes, or until a toothpick comes out clean.
  7. Let bread cool in the pan for 10 minutes, and then transfer to a wire rack to cool completely before removing from pan.

One of my favorite things about St. Patrick’s Day, besides getting to spend a fun day with my kids, is having an excuse to make even more green foods. We all know how healthy green veggies are for us and our families, and this holiday, I go all out with the (naturally) green foods!

Normally, I like to get some veggies into my kids’ diets with hidden spinach in their smoothies or recipes like these broccoli nuggets or these spinach & bacon mini quiches. Any veggie counts!

My daughter loves the soft pretzels sold at the mall so naturally, I made an easy homemade version just for her. I decided to make bites instead so they are perfect for snacking after school or packing in lunch boxes!

My kids beg me to make this soft pretzel bites recipe almost weekly. I don’t blame them, though! They’re soft, sweet, and the perfect size for little fingers.

You do have to wait for the dough to rise (the hardest part!), but most of the time spent on this recipe is hands-off, so you can go get other things done while you make it. It’s totally worth it though; just look at those beautiful bites of cinnamon-y sugar goodness!

Cinnamon Soft Pretzel Bites Recipe

Ingredients

  • 1 cup warm water (100-110ºF, 35-45ºC)
  • 2 1/4 teaspoons (9 g) active dry yeast
  • 3 cups (375 g) bread flour, plus more for work surface
  • 1 tablespoon (18 g) salt
  • 2 tablespoons (30 g) brown sugar, packed
  • 4 tablespoons (56 g) unsalted butter, softened
  • 1/2 teaspoon vegetable oil
  • 8 cups water (1.8 L)
  • 1/2 cup baking soda (110 g)
  • 1/2 cup sugar (100 g)
  • 1/2 teaspoon (1 g) cinnamon
  • 3 tablespoons (42 g) butter, melted

Instructions

  1. Stir together warm water and yeast in a bowl and let stand for ten minutes to activate yeast.
  2. In the bowl of your stand mixer, combine flour, salt and brown sugar. Add softened butter and activated yeast with the mixer on low. Scrape the sides a few times to combine.
  3. Switch to the bread hook attachment and mix for about 5 minutes, dusting with a little more flour along the way to make sure it doesn’t stick to the walls of the bowl.
  4. Once the dough is elastic, remove it from the mixer bowl, form a ball, and transfer it to a lightly oiled bowl, turn to coat with oil. Cover with a kitchen towel and refrigerate overnight or, 2-3 hours in a warm spot.
  5. Heat oven to 450°F (230ºC) with racks in upper and lower third. Well oil 2 large baking sheets (about 17×12 inches, 43×30 centimeters). Bring water and baking soda to a boil in a 5-quart (946 ml) sauce pan.
  6. Punch down dough and divide into quarters. Form each quarter into 4 balls. Roll each ball into a 12 inch (30 centimeter) long rope. Cut each rope into six 2-inch (5 centimeter) pieces.
  7. Place a dozen pretzel bites and boil for 30 seconds, then transfer with a slotted spoon onto the oiled baking sheets.
  8. Bake pretzel bites in oven, switching sheets between racks and rotating sheets halfway through baking, until browned, 8 to 10 minutes (watch closely toward end of baking; bites brown quickly in last few minutes). Immediately transfer pretzel bites to wire racks to cool.
  9. In a small bowl, mix sugar and cinnamon. Brush pretzel bites with melted butter, lightly dip into cinnamon sugar mixture and enjoy.

And even if I’ve eaten a filling lunch, I usually start to crave a sweet snack in the afternoon, too. I don’t like to eat something heavy to ruin my dinner, though. Enter these Brownie Energy Bites from The Best Homemade Kids’ Snacks on the Planet!

My kids absolutely love these. I love that they only take a few minutes to make, and I can make a big batch at the beginning of the week so we have snacks ready! It really is all about planning. If you don’t have something healthier to grab, you’ll be more likely to grab the bag of chips or something at the drive-thru. Of course, we like to treat ourselves every now and then, but on a day to day basis, I like to have healthier options ready for little fingers to grab.

These are super simple to make, requiring just a handful of nutritious ingredients. They’re refined sugar-free and grain-free – if you’re allergic to nuts, you can try replacing the cashews with sunflower seeds. While these are perfect for snack time, you can even pack a couple of these in your kids’ lunch boxes as a sweet treat.

Chocolate Brownie Energy Bites

Ingredients

  • 1 cup (145 g) raisins, packed
  • 1 cup (120 g) cashews
  • 1/4 cup (20 g) cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Pinch cinnamon

Instructions

  1. Place raisins in a medium bowl and cover with hot water. Let soak for 5 minutes to soften then drain.
  2. Add raisins and all remaining ingredients into a food processor and pulse until mixture turns into the consistency of sand. Remove blade from the unit.
  3. Using your hands, scoop out dough and form into balls on the palms of your hands.
  4. Chill for 30 minutes and enjoy. Store in an airtight container in the fridge for one week.
