One of my favorite things about St. Patrick’s Day, besides getting to spend a fun day with my kids, is having an excuse to make even more green foods. We all know how healthy green veggies are for us and our families, and this holiday, I go all out with the (naturally) green foods!
Normally, I like to get some veggies into my kids’ diets with hidden spinach in their smoothies or recipes like these broccoli nuggets or these spinach & bacon mini quiches. Any veggie counts!

But for St. Patrick’s Day, I like to get a little more creative! We still usually have green smoothies because you can sweeten them with delicious fruit and completely hide the veggie taste, but these healthy green recipes for St. Patrick’s Day are so creative! Pancakes, noodles, muffins…the possibilities are endless!

Hi Laura, ….I would love to try your recipes, but unfortunately I am married to a fella who is a “meat and potatoes with gravy, and pasta also” man. He doesn’t like very many veggies, but I try to get as many into him as I can..(sometimes blended in, like soups, etc). But I still like to read about your recipes. There might be something there I can use just by adding a little of what he likes in it.
