Fluffy Banana French Toast

The BEST banana french toast recipe that yields fluffy centers and golden edges! Every bite is infused with delicious banana and cinnamon flavor. 


  • 2 small ripe bananas
  • 4 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons cinnamon
  • 1/4 cup milk
  • 8 slices of thick bread
  • Oil spray or butter, for cooking
  • Maple syrup, for serving
  • 1 banana, sliced, for serving


  1. In a blender, place banana, eggs, vanilla, cinnamon, and milk. Blend to combine into a smooth mixture.
  2. Pour mixture into a large 9×13 baking dish. Place bread slices in the mixture (depending on the bread used, you might need to do this in batches). 
  3. Leat the bread slices soak up the mixture for a couple of minutes, flip, and soak up the mixture on the other side. 
  4. Heat a large non-stick pan or griddle over medium heat. Once hot, spray with oil or melt butter. Place 3 to 4 bread slices on the pan or more on a griddle, and cook for 2 to 3 minutes, without moving the bread, until the bottom is golden and flips easily.
  5. Flip the banana french toast slices and cook the underside for an additional 2 minutes, until the middles are puffy and the liquid mixture it absorbed is cooked through. Remove onto a plate and repeat the process with the remaining bread slices if necessary.
  6. Serve with maple syrup and banana slices, optional.



Note: nutritional information is for 2 banana french toast pieces per person and 1/4 of the additional banana, sliced. It does not include maple syrup.
