2 small ripe bananas
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons cinnamon
8 slices of thick bread
Oil spray or butter, for cooking
Maple syrup, for serving
1 banana, sliced, for serving
In a blender, place banana, eggs, vanilla, cinnamon, and milk. Blend to combine into a smooth mixture.
Pour mixture into a large 9×13 baking dish. Place bread slices in the mixture (depending on the bread used, you might need to do this in batches).
Leat the bread slices soak up the mixture for a couple of minutes, flip, and soak up the mixture on the other side.
Heat a large non-stick pan or griddle over medium heat. Once hot, spray with oil or melt butter. Place 3 to 4 bread slices on the pan or more on a griddle, and cook for 2 to 3 minutes, without moving the bread, until the bottom is golden and flips easily.
Flip the banana french toast slices and cook the underside for an additional 2 minutes, until the middles are puffy and the liquid mixture it absorbed is cooked through. Remove onto a plate and repeat the process with the remaining bread slices if necessary.
Serve with maple syrup and banana slices, optional.
