Banana Sushi Rolls

This banana sushi is a fun school lunch idea you can make with leftover tortillas and your favorite nut butter!

Ingredients

  • 8-inch flour tortillas
  • 2 tablespoons peanut butter or nut-free alternative
  • 1 banana, peeled
  • 1 cup grapes
  • 1 kiwi fruit, peeled and sliced

Instructions

  1. Spread the peanut butter over the tortilla and place the peeled banana on one end. Roll the tortilla over the banana and cut it into 1-inch rounds.
  2. Pack the sushi rolls into a lunch container and add the fruit to the empty compartments.
  3. Close the lid and add the lunch box to a lunch bag with an ice pack.
