Crockpot Chunky Potato and Sausage Soup

Who needs a chunky soup from a can when you can have this delicious homemade meal?

chunky potato soup in the crockpot momables.comI’ve said it before, and I’ll say it again, I am in love with my crockpot. It’s true. We share a special relationship.

In the mornings, I prepare all the ingredients, turn it on low, and am on my way out the door. I love getting home to the wonderful smell of dinner ready and waiting for us to enjoy!

Being that I am half Irish and half Scottish, my significant other has dubbed this dish “Scottish Stew” because it came from my Scottish mother who used to make this on the stovetop. Now we enjoy this recipe on a regular basis in our slow cooker, instead.

Crockpot Chunky Potato and Sausage Soup

Ingredients

Scale
  • 2 large baking potatoes, diced
  • 2 large carrots, sliced
  • ½ onion, diced
  • ½ cup chicken broth
  • 12–14 ounces kielbasa, sliced
  • 2 sweet peppers, diced
  • 2 apples, peeled and diced
  • ½ cup apple juice
  • 2 tablespoons Italian herb seasoning
  • 1 teaspoon garlic salt

Instructions

  1. Cook the potatoes, carrots, onion, and chicken broth on HIGH for 1 hour in the crockpot.
  2. Add the remaining ingredients and the seasoning. Stir to combine.
  3. Cook on LOW for 4 to 5 hours.
  4. If more liquid is needed, add water ¼ cup at a time.
  5. Enjoy!

    If you were to set this in the morning, how would you turn it to low after one hour?

    If we’re avoiding apples – would you just leave them out or substitute them with something else?

      you can leave them out or use sweet potatoes or pears. These would also make this recipe delicious!

    approximately how many little creamer potatoes should I use to substitute for the baking potatoes? Sorry – new to cooking all together and don’t want to alter your recipe too much! It’s just what I have on hand. BTW, absolutely love your blog and new cookbook!

    Made this tonight and it was delicious. I added a bit more juice and chicken stock to have a bit more broth but I have a feeling it didn’t need it. Loved it!

    Any recommendations for locating kielbasa without msg and other unsavory stuff (i.e. Hillshire Frams, Johnsonville)?

      Absolutely, I purchase mine at whole foods or online. You might want to go with a smoked sausage. Those are easier to find without the additives.

    Thank you so much for this recipe. My grandma made something similar when we were visiting her a few years ago, and everyone loved it; it was so simple and delicious. But she has trouble remembering things now, and couldn’t remember the recipe last time I saw her. This is it. Can’t wait to make it for the family….
