Loaded Baked Potato Deviled Eggs | 5 Healthy Bentos with Deviled Eggs

These five healthy bentos with deviled eggs are a fun way to pack everyone’s favorite party food into lunches they will love.

Ingredients

  • 6 large eggs
  • 2 to 2 1/2 tablespoons sour cream
  • 1 teaspoon finely chopped fresh chives or,
  • 1/2 teaspoon dried chives
  • 2 tablespoons shredded cheddar cheese
  • 2 strips of bacon, cooked and finely chopped

Instructions

  1. Slice the hard-boiled eggs in half, lengthwise, and remove the yolks into a medium bowl. 
  2. Mash the yolks with a fork, add the sour cream, chives, Cheddar cheese, and bacon crumbles. Combine with the fork until the mixture is cohesive.

  3. Transfer the filling to a plastic zip bag or piping bag. Cut the end and squeeze out filling inside egg white half. Alternatively, use a spoon to stuff the egg halves with the egg mixture.

  4. Sprinkle with additional cooked, chives and crumbled bacon, and refrigerate for 1 hour.

  5. Pack into lunch containers or serve as an appetizer.
