Ingredients

  • 1 cup cooked pasta (whole-wheat)
  • 1ounce mozzarella cheese, sliced
  • 12 cup broccoli florets, chopped
  • Nitrate-free pepperoni slices, quartered
  • 34 black olives, sliced
  • 34 cherry tomatoes, halved
  • 12 tablespoons Italian dressing (or plain olive oil)
  • Salt & pepper, to taste

Instructions

  1. In a medium bowl, combine all the ingredients. Refrigerate for up to 3 days or pack inside a lunch box.
