Do you sometimes crave something thin, chocolatey and crunchy? Look no further. These homemade thin mints are easy to make with just a few ingredients.

When I mention chocolate and mint, what comes to mind? Thin Mint Cookies, maybe?
Those incredibly addictive treats that come in the green box, sold door to door only once a year?!
Well, now my friends, you can make them at home anytime you like, with a simple recipe using only three ingredients.
Homemade Thin Mint Cookies
- 1 sleeve Round Whole Wheat Crackers
- 1 bag semi sweet chocolate chips
- ½ teaspoon peppermint extract
Melt chocolate chips on a double broiler or in the microwave in 30 second increments. Once the chocolate is melted, stir in peppermint extract. Using a fork, dip individual crackers into the chocolate, coating both sides. Lay coated crackers on parchment paper. Chill in refrigerator until chocolate is set. Store in airtight container.

We do these on Christmas “cookie day” every year. We sprinkle on some crushed candy cane. We try to make several different cookies and these are a great addition, because they don’t need oven time.

Those are really yummy and easy! Have you ever done the same thing but with peanut butter in between 2 crackers and then dipped in chocolate? It is delish and easy, my friends always rave over them.

yes, with the peanut butter between the crackers is one of my favorite things! I don’t put mint in those though… these are meant to be a lighter version of the girl scout cookies everyone seems to love.
