The school year tends to create a routine of carpool, homework, afterschool activities and of course, packing lunches. We call this a “routine” because that is what we do, the same thing, day after day for 9 months of the year.

In the same token, we have to pack school and office lunches day after day. While it’s important to establish a routine with our schedule, that doesn’t mean we need to get stuck eating the same things all the time.

Chicken Salad is a lunchtime favorite of mine, and recently, my kids have started to enjoy it as well. But who wants to eat a chicken salad sandwich every day? Not us! In this quick video, you’ll see how simple it is for you to make a variety of lunches with classic chicken salad.

My kids get easily bored with salads. I love packing them for lunch because I want to feed my kids nutritious, fresh vegetables, but sometimes they come home and there’s only a bite missing out of their salad! As soon as I started packing this Santa Fe Chicken Salad, their whole salad was gone. Recipe success!

This salad is filled with so many delicious Mexican-style ingredients – black beans, corn, avocado, and yummy taco seasoning. Soup is one of our favorite dinners to enjoy as a family. There’s just something about a big bowl of soup that’s so comforting and calming after a long day. I love making this Enchilada Soup or a big pot of Paleo Chili, but sometimes I like going back to a classic – chicken noodle soup!

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs
  • 4 large carrots, peeled and chopped
  • 1 medium yellow onion, diced
  • 2 ribs celery, chopped
  • 3 cloves garlic, minced (or 1½ teaspoons dried)
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1 bay leaf
  • 6 cups low-sodium chicken stock or broth
  • 1 cup water
  • 2 cups uncooked pasta (wide egg noodles, spaghetti, or fusilli – gluten-free, if needed)

Instructions

  1. In a large Crockpot (6-quart), place all the ingredients minus the pasta. Cook for 6 hours on low heat, or 4 hours on high.
  2. After 4 or 6 hours (depending on temperature setting), remove the chicken and chop to bite-size pieces. Place the chicken back in the Crockpot.
  3. Add the pasta, turn the heat up to high, cover, and cook for another 15-20 minutes, until pasta is tender.
  4. Discard the bay leaf, and serve soup immediately.

Notes

You can also use leftover chicken that is already cooked. Follow the recipe as is.
