One of my favorite parts of summer is having family & friends over to enjoy good food and each other’s company. I’m a true entertainer at heart! I love to serve up delicious eats and spend time with the ones I love. There is no better time of the year to do this than summer – the weather is beautiful, the food is fresh, the kids are out of school, and everything is just better. Agreed?

We like to use our outdoor kitchen as much as possible during the summer, so having a ton of recipes to make on the grill is important. We always grill fresh zucchini and skewers, but I wanted to get some more ideas when it came to healthy BBQ recipes so my guests will really be impressed.

Ah, summer. It’s such a fun time of year because the weather is nice, and there’s so much time to spend with your kids and family. We love getting outdoors, staying active, and enjoying each other’s company while we can!

What do you get when you combine fresh fruit and lemonade? These awesome popsicles of course! 
By looking at the calendar it is officially summer, but if go by the temperature gauge it has already felt like summer for a few weeks.  

We’ve been cooling off by spending hours in the swimming pool, having water balloon fights and eating popsicles.

If you haven’t made your own popsicles before, it is probably one of the easiest things you can do.  Those “layered” popsicles you see on the web can be intimidating to make; so if you want a recipe that you can “pour-and-go” this is the one!

The equipment doesn’t need to be fancy, and your kids will love being involved in dreaming up all the flavor possibilities.  

It’s a wholesome way to make a cool snack that both you, your kids and probably even the neighborhood kids are going to love this summer.

Fresh fruit is always a great add-in for popsicles. The natural sweetness is just perfect for quenching the need for something cool and sweet after an afternoon in the summer sun.  

Adding in the traditional drink of summer, the lemonade gives it a tartness that puts these popsicles over the top!

Ingredients

  • 2 cups lemonade, homemade or store bought
  • 11 1/2 cups fresh fruit, chopped
  • Popsicle molds

Instructions

  1. Fill popsicle molds with chopped fruit.
  2. Pour lemonade into each mold, covering the fruit and leaving 1/4 inch space at the top.
  3. Insert popsicle mold covers or sticks and freeze, for least 5 hours or overnight.
  4. Run water over popsicle mold to separate, pull popsicle out, and enjoy.

Dessert pizza!

First, slice a watermelon into roughly 1-inch-thick round slabs. Then slice the desired number of slabs like a pizza, into 6 to 8 triangular wedges each.

Then mix and match as many toppings as you’d like for a treat that’s sure to please! Try mint, sliced strawberries, raspberries, blueberries, sliced or halved grapes, sliced banana, shredded coconut, raisins, dried goji berries or cranberries, thinly sliced peaches, plums, or pears—so many yummy flavor combinations!

For an added Summer-y twist, you could even add chopped frozen berries and bananas instead! What a great way to cool off on a hot day!

You don’t need a “sauce,” but if you’d like to include one, some great options are honey or agave syrup, honey glaze (honey mixed with a little water to make it more spreadable), plain nut or seed butter, plain or flavored yogurt, yogurt mixed with a little honey, or yogurt mixed with some peanut butter or other nut or seed butter (any ratio you’d like)!

Add some crunch!

Seeds (pumpkin, sunflower, chia, poppy, etc.), whole or chopped nuts (almonds, pecans, macadamia, walnuts, etc.), granola, and/or whole-grain small or crushed cereal (rice puffs, corn flakes, O-shaped cereals, mini ball-shaped cereals, etc.) make great and healthy additions to your fruity “pizza!”

Sweet and savory!

Don’t be afraid to try savory toppings as well! You can try a “Greek Salad Pizza” with some basil, Feta, red onions, and kalamata olives! Or just mix and match a mild cheese (crumbled Feta, ricotta, or mozzarella) with kalamata olives or basil. Or use ingredients from your favorite watermelon salad!

watermelon-pizza-savoryWith a protein (yogurt, cheese, or nut butter) and a whole grain (cereal or granola), this could even make a great breakfast option! You could do most of the prep the night before and store your slices in a covered casserole dish in the fridge. If you want them to stay crispy and chewy, just save the “dry” ingredients like coconut, cereal, and raisins until you’re ready to serve!

To make a good homemade Popsicle, it’s best to invest in a good set of pop molds. Check out the MOMables store to see our favorite ones.

This recipe will have you seeing GREEN. ;) The spinach adds the beautiful color, but all the kiddos will taste is the sweetness from the pineapple and the yummy flavor of the banana.

Put your ingredients into a blender, and process them until they’re completely smooth. Pour the mix into your molds, freeze for 3 to 4 hours, and they’re ready to devour!

Trick: If you’re having trouble getting the mold off the stick after freezing, run it under some hot water to help loosen it, and then try pulling it apart. Repeat as necessary.

  • 2 medium to large ripened bananas
  • 2 cups diced pineapple
  • 1 1/2 cups fresh spinach
  • 1/4 cup water (or juice from the pineapple)

Instructions

  1. Place all the ingredients into the blender.
  2. Process until completely smooth, 3 to 4 minutes.
  3. Pour into the molds.
  4. Freeze for 3 to 4 hours.

Chocolate Avocado Popsicles

You might be thinking “why are these SUPER pops?” Well, because they contain a delicious SUPERFOOD—Avocados!

The summer has been rough here. When we get home from camp or playing outside, the first thing we want to do is cool off—fast! So I immediately search the freezer for delicious Popsicles.

I don’t want to load my daughter up with junk or too much sugar. I’d rather have something with a bit of a “healthy kick,” if you will, while not sacrificing the yummy flavor.

I also don’t want a recipe that’s overly complicated or has a list of ingredients I don’t even have stocked in my house! They should be simple (like MOMables menus) and allergy-friendly. That’s why I came up with these delicious Chocolate Super Pops!

They taste sweet and chocolatey, but hidden inside are healthy fats and tons of antioxidants. The delicious fruit used is a great source of vitamins, potassium, folic acid, and amino acids.

We keep ours dairy-free by using nondairy rice milk. Depending on the brands you buy for the cocoa powder, they can be made gluten- and top-8 allergen-free!

The brand of Popsicle molds you have will determine how many each batch yields. Ours yielded four.

Chocolate Super Pops

Ingredients

  • 2 ripe avocados, pitted and peeled
  • 1 medium-large ripe banana
  • 2 tablespoons + 1 teaspoon cocoa powder
  • 1 1/2 tablespoons honey
  • 3/4 cup milk (or nondairy substitute)
  • 1/2 teaspoon vanilla

Instructions

  1. Put all the ingredients into a food processor or blender.
  2. Mix until smooth. Scrape the sides, and mix again if needed.
  3. Pour the mixture into the Popsicle molds, and freeze until solid (about 4 hours).
  4. Enjoy!

Frozen Yogurt Shapes

Need a freezer-ready snack idea for the summer? MOMables realizes that during summer, kids still need healthy snacks and healthy lunches.

We love to fill our freezer with healthy and easy snacks, especially in the summer when something cold is so refreshing. What my daughter and I love to make most is frozen yogurt shapes.

I first came across this idea from one of our own MOMables contributors, Keeley. It’s such a brilliant idea, and I make them all the time now! Using some silicone ice cube trays found in dollar stores, you can make a fun and creative snack for your kids in minutes!

Freezing yogurt and fruit into fun shapes somehow makes it extra special to kids. The best part is that they are so easy to make, you can have your kids help you make them. My daughter likes to choose which silicone tray we use, or which fruits we use.

I usually will make a batch of frozen yogurt shapes when I find some extra-ripe fruit in the back of the fridge. Before the fruit goes bad, I either freeze it whole, or blend it with yogurt and make some yogurt shapes.

These frozen yogurt shapes can also be easily made into Frozen Yogurt Pops with the right mold and popsicle sticks!

My daughter loves to take frozen yogurt shapes out of the freezer and just pop them into her mouth.  Sometimes, she puts a few of them in a bowl and enjoys “mushing” them together and eating them as if it was ice cream. So according to her, frozen yogurt shapes are just as good as ice cream! Now this is one snack I don’t mind if she wants seconds—or thirds. ;)

You could also put frozen yogurt shapes into a lunch too, but it’s important keep in mind that the shapes will melt.

Frozen Yogurt Shapes

Ingredients

  • 1 cup mixed berries (for ours, we used strawberries, blackberries, and raspberries)
  • 1 cup vanilla Greek yogurt
  • Silicone ice cube tray(s) of choice

Instructions

  1. Place the mixed berries in a small blender, and blend until they are coarsely chopped. Add the vanilla yogurt and blend until smooth.
  2. Pour the mixture into the silicone ice cube trays and transfer to the freezer. Freeze for 3 to 4 hours or until frozen solid.
  3. Once they’re solid, transfer the frozen shapes out of the trays into freezer bags.

Notes

This recipe filled two heart silicone ice cube trays, however every silicone ice cube tray is different, so you can easily make adjustments by adding more yogurt if needed.
