Chop or shred the cooked chicken into small pieces and place them in a bowl. Add the Buffalo sauce and toss to coat the chicken with the sauce
To enjoy at home:
Make a base of rice at the bottom of a bowl and top it with the Buffalo chicken. Warm it up in the microwave for about a minute, stopping to stir halfway through.
Top with the cherry tomatoes, blue cheese, and diced avocado. Drizzle a little Ranch dressing over the top.
In a lunch box:
Make a base of rice at the bottom of the lunch container). If have access to a microwave and plan on heating it up, pack the toppings separately; otherwise, enjoy it cold or at room temperature and top it with the cherry tomatoes, blue cheese, and avocado.
Pack the Ranch dressing in a separate dressing container.
