Thai peanut dressing
Instructions
Assemble the salad
In a large bowl, combine the cooked penne pasta, shredded red cabbage, matchstick carrots, bell pepper, sliced chicken, chopped peanuts, and cilantro.
Dress the salad
Drizzle the Thai peanut dressing over the salad and toss everything together until it's well coated.
Refrigerate
Cover and refrigerate up to three days or until ready to use.
For packed lunch
Pack the salad into a lunch container, along with an ice pack.
