Using a flexible skewer, thread one tomato, a mozzarella cube, a basil leaf, another mozzarella cube, and finally another tomato. Repeat with the remaining skewers.
If including pesto, pour a small amount into a tiny dip container with lid and pack separately. Wait to drizzle over skewers until just before eating.
Pack for school
Pack the skewers into a hard lunch container, keeping any sides separate. Keep everything refrigerated until ready for school and add an ice pack, if needed.
