1sliceof bread, like sourdough or multigrain–toasted and cooled
½ripe avocado, sliced or mashed with a squeeze of lemon
Lunch sides, like cherry tomatoes, sliced cucumber and apple slices
Instructions
Toast the bread
Toast a slice of bread until golden and let it cool completely so it stays crisp in the lunch container.
Prepare the avocado
Mash or slice avocado with a squeeze of lemon and store it in a small lidded dip container, or use a single-serve guac pack.
Pack for school
Place the toast in one section of a hard bento-style container. Add fruits, veggies, and avocado to separate compartments. Pack additional toppings separately and wait to add until just before eating. Pack with an ice pack to keep the avocado fresh.
