Can Avocado Toast Be Packed for Lunch

Yes! Packed correctly, avocado toast makes an awesome school lunch. I keep the toast crunchy by placing it in one section of a hard container with compartments, and pack the avocado and any fruits or veggies in the others to keep everything fresh.

The result? A trendy (and budget-friendly) DIY lunchable, similar to my chips & guacamole bento lunch! When my teens are ready to eat, all they have to do is pop the lid and build their Instagram-worthy avocado toast!

How to Prevent Avocados from Browning

Avocados turn brown fast once they hit the air. Add a squeeze of lemon over sliced or mashed avocado to slow browning, and pack it in a small lidded dip container or use a single-serve guac pack. Keep it fresh longer with an ice pack. Follow these tips and you’re pretty much guaranteed a fire emoji lunchtime text!

Topping Ideas

Whether your teen likes to keep it basic or go gourmet with different toppings, I’ve got you covered! Here are some crave-worthy combos we've rotated through and loved:

  • Hard-boiled eggs + everything bagel seasoning
  • Cherry tomatoes + crumbled feta
  • Sliced turkey
  • Microgreens or sprouts
  • Bacon bits + shredded cheddar
  • Red pepper flakes
  • Lemon zest
  • Smoked salmon + capers
  • Honey drizzle (It’s a thing, I promise)

Ingredients

  • 1 slice of bread, like sourdough or multigrain-toasted and cooled
  • ½ ripe avocado, sliced or mashed with a squeeze of lemon
  • Lunch sides, like cherry tomatoes, sliced cucumber and apple slices

Instructions

Toast the bread

  • Toast a slice of bread until golden and let it cool completely so it stays crisp in the lunch container.

Prepare the avocado

  • Mash or slice avocado with a squeeze of lemon and store it in a small lidded dip container, or use a single-serve guac pack.

Pack for school

  • Place the toast in one section of a hard bento-style container. Add fruits, veggies, and avocado to separate compartments.
Pack additional toppings separately and wait to add until just before eating.
Pack with an ice pack to keep the avocado fresh.

    The perfect lunch for my 8th grader who is now too “cool” for sandwiches. For some reason “avocado toast” is the new trendy way to pack her lunch. Can’t say I understand it, but I’m taking the win.
