Homemade Chipotle Chicken Lunch Wrap
Ready to elevate your school lunch game? This Chipotle Chicken Wrap with Avocado has the perfect balance of protein, healthy fat, and veggies, all wrapped up in a tasty tortilla. Plus, it's super quick to make.
In fact, this is one of my teenager’s go-to lunch ideas when we have leftover rotisserie chicken. Better yet, she sometimes uses those guacamole singles to pack this wrap real fast!
What is in the Chicken Wrap
Here is what you’ll need and swaps you can make to pack this delicious high-protein lunch:
- Tortilla: A whole-grain tortilla is a great source of fiber. You can also use gluten-free, low-carb, or flavored wraps instead.
- Chipotle Mayo: Adds flavor and a creamy texture to hold everything together. You can make it at home, use store-bought, or even substitute with plain mayo mixed with a bit of hot sauce.
- Cooked Chicken: last night’s chicken breasts or thighs and rotisserie will work; you can even use canned chicken.
- Avocado: Mash it up for easy spreading, or use store-bought guacamole.
- Black Beans: Full of fiber and protein, beans also help you stay full longer. Any canned beans, cooked lentils or garbanzo beans are great too.
- Veggies: Adding corn, grilled peppers, and onions will add nutrition and flavor to your wrap. If you don’t have any, microwave some frozen veggies -whatever you have on hand.
How to Pack a Chipotle Chicken Wrap for School Lunches
Some tips that help this wrap come together in no time, especially on busy mornings, include:
- Mix the chicken salad
Whether you’re using rotisserie chicken or grilled chicken, the pieces should be small-think bite-size. To add more flavor, add ¼ teaspoon of taco seasoning to the chicken salad. - Layer the ingredients
Spread more chipotle mayo on the tortilla to ensure every bite is delicious; it’s the “glue” that holds it all together. Then, layer the ingredients in the middle of the tortilla. - Wrap it up
Fold the sides of the tortilla in, then the bottom over the filling, and roll it up tightly while tucking the filling snugly into the tortilla. - Pack it for lunch
Place the chipotle chicken wrap in the main compartment of a lunchbox and any fruit and veggies in other compartments or in another container. Keep it refrigerated until you pack it in an insulated lunch bag.

How to Keep the Wrap Fresh Until Lunchtime
Lunch wraps like this one make terrific school lunches, and with these tips, they’ll stay fresh and tasty until lunchtime.
Keep it Chilled
If you're making the lunch in advance, store it in the refrigerator until you’re ready to leave. Use an ice pack to keep everything inside the lunch bag cool and fresh.
Avoid Soggy Wraps
Slicing your wrap in half right before you place it in the lunch bag prevents the filling from falling out or making the wrap soggy, especially if the container is too big for the wrap.
Keep It Fresh
Covering the lunch wrap with a damp paper towel will help prevent it from drying out. This is especially important for gluten-free tortillas, which tend to dry out quickly.
Use Separate Compartments
When you add fruits and veggies to the school lunch, use separate containers for the produce so everything stays crisp and fresh.

How many days can I make this ahead before the tortilla gets soggy? Going to try whole wheat tortillas. I am trying to meal prep.
Laura Fuentes says
Assembled one day ahead. If you want to meal prep this same wrap for a few days, I recommend having the chicken cooked and ready to go so all you have to do is a quick, 5 minute assembly of the wrap. I hope this helps!
