This chipotle chicken wrap is one of my favorite ways to turn leftover chicken into a filling school lunch with big flavor. Here, you’ll learn how to layer it, roll it tightly, and pack it so the tortilla stays fresh until lunchtime.

Packing It for Lunch
- Mix the chicken salad
Whether you’re using rotisserie chicken or grilled chicken, the pieces should be small. To add more flavor, add ¼ teaspoon of taco seasoning to the chicken salad. - Layer the ingredients
Spread more chipotle mayo on the tortilla to ensure every bite is delicious; it’s the “glue” that holds it all together. Then, layer the ingredients in the middle of the tortilla. - Wrap it up
Fold the sides of the tortilla in, then fold the bottom over the filling, and roll it up tightly while tucking the filling snugly into the tortilla. - Pack it for lunch
Place the wrap in the main compartment of a lunchbox and any fruit and veggies in other compartments or in another container. Keep it refrigerated until you pack it in an insulated lunch bag.

Laura’s School Lunch Packing Tips
Don’t overdo the chipotle mayo, and keep wetter ingredients like avocado or guacamole toward the center instead of against the tortilla. Rolling it tightly also helps keep everything in place.
Yes. Assemble it, roll it tightly, and refrigerate it in a sealed lunch container. I prefer to leave it whole overnight and slice it in the morning so the filling stays tucked inside.
If your avocado isn’t ripe, using a guacamole single also works because it spreads great over a tortilla.
Pack it in a sealed lunch container where it fits snugly. If you’re using a gluten-free tortilla, which tends to dry out faster, you can wrap the finished wrap in a slightly damp paper towel before placing it in the container.

Chipotle Chicken Wrap with Avocado

Ingredients
- 1 large tortilla
- 1 ½ tablespoons chipotle mayo
- ½ cup cooked chicken, chopped
- ¼ avocado, mashed
- ¼ cup black beans
- Veggies: corn, grilled peppers & onions, optional
Instructions
Make the wrap:
- In a small bowl, combine the chicken and half of the chipotle mayo. Sprinkle a little taco seasoning for added flavor.
- Spread the other half of the chipotle mayo thinly on the wrap. Place the seasoned chicken in the middle of the wrap. Top with the mashed avocado or guacamole, black beans, and any additional veggies you enjoy.
- Fold the sides in, and then the bottom over the filling. Roll tightly up, while tucking the sides in. Slice it in half and enjoy.
Pack it for lunch:
- Place the chicken wrap inside the main compartment of a lunchbox along with some fruit and veggies. Cover with the lid and refrigerate until ready to pack inside a lunch bag with or without an ice pack.

How many days can I make this ahead before the tortilla gets soggy? Going to try whole wheat tortillas. I am trying to meal prep.

Assembled one day ahead. If you want to meal prep this same wrap for a few days, I recommend having the chicken cooked and ready to go so all you have to do is a quick, 5 minute assembly of the wrap. I hope this helps!
