Easy Buffalo Chicken Wrap

When I have a little cooked chicken leftover from dinner, I love turning it into a simple chicken wrap. My youngest, who loves all things spicy, makes this buffalo version on repeat. This high-protein lunch idea takes just a few minutes to assemble and packs great for school.

Make This Wrap

  1. Mix the chicken
    Combine the cooked chicken with the mayonnaise and buffalo sauce until evenly coated.
  2. Assemble and roll
    Place the tortilla on a flat surface and layer the lettuce in the center. The lettuce separates the chicken and sauce from the tortilla, preventing sogginess. Add the buffalo chicken on top, fold both sides in, and roll tightly, burrito-style.
  3. Pack for lunch
    Place the wrap snugly inside a lunch container and refrigerate until you’re ready to pack it. Keep fruit, veggies, and other sides in separate compartments and use an ice pack, if needed.

Laura’s School Lunch Packing Tips

How do you keep the wrap from getting soggy?

Place the lettuce directly against the tortilla before adding the buffalo chicken. It creates a barrier between the saucy filling and the tortilla and helps it stay fresh longer.

Can I use rotisserie chicken?

Absolutely. Shredded rotisserie chicken is one of my favorite shortcuts when there isn’t leftover chicken from dinner. Just mix it with the mayo and buffalo sauce and it’s ready for the wrap.

Can I use chicken salad from the store?

Absolutely! Measure out the chicken salad in a bowl, add the buffalo sauce, and mix. Now you have a shortcut version without the need to cook.

Can I add Ranch?

Of course. Swap the mayo for Ranch and mix it with the buffalo and chicken or drizzle a little inside the wrap or pack it separately for dipping. Just don’t add too much or the tortilla can soften while it sits.

Ingredients

  • 1 large tortilla
  • ½ cup cooked chicken, or chicken salad
  • 1 tablespoon mayonnaise
  • 1 tablespoon Buffalo sauce

Instructions

Mix the chicken

  • Combine the cooked chicken, mayonnaise, and buffalo sauce until evenly coated.

Assemble

  • Place the tortilla on a flat surface and layer the lettuce in the center. The lettuce prevents the tortilla from getting soggy by creating a barrier. Spoon the buffalo chicken over the lettuce.

Wrap it

  • Fold in both sides and roll the tortilla tightly, burrito-style.

Pack for lunch

  • Place the wrap inside a lunch container and refrigerate until ready to pack. Add fruit, veggies, and other sides in separate compartments and place inside an insulated lunch bag with an ice pack, if needed.

Notes

You can add Buffalo sauce to store-bought chicken salad for a quick shortcut! It’s already mixed with mayo, so all it needs is a little spice to add some heat.
