Preheat the oven to 350°F and line two baking sheets with parchment paper.
Cut the ends off the plantains and score the skins so you can peel them. Cut each plantain into diagonal slices, as thin as you can manage but keeping them similar in size.
Brush both sides of the plantain slices with coconut oil and place them on the prepared sheets. Sprinkle with salt.
Bake:
Place the sheets in the preheated oven and bake for a total of 20 to 25 minutes, rotate and swap the baking sheets at around 15 minutes and flip the chips over.
Bake for the remaining 5 to 10 minutes, removing the chips from the oven before they begin to brown.
