Baked Plantain Chips
It never fails: I say “chips” and I know my teens will open their eyes and smile to the bag of delicious crunchiness. Who can blame them? I also smile. But what makes me happier is serving healthier chips like these Baked Plantain Chips.
They are tasty, crispy, and slightly salty, making them a great after-school snack and a terrific addition to the lunchbox. Plus, I cook them in the oven, so I use very little oil, and there’s no frying mess involved. Amazing!
I first shared this recipe in my book The Best Grain-Free Meals on the Planet, and it’s been a huge hit over the years with my kids and families everywhere.
Ingredients
Incredible baked plantain chips with a three-ingredient recipe? Make them once, and you won’t crave the store-bought version anymore. Make sure you have:
- Green plantains: they are larger, starchier than bananas, and not so sweet.
- Coconut oil: to give them their crisp texture.
- Salt: to flavor them and make them savory.
How to Make Plantain Chips in the Oven
The secret to baking perfect plantain chips is to slice the plantain thin and even and check the oven a couple of times. Are you ready to see how to bake plantain chips? Let’s go!
- Prep the oven
Preheat the oven and line two baking sheets with parchment paper. - Prep the plantains
Peel the plantains and cut them into even diagonal slices, as thin as you can. Brush both sides generously with coconut oil and sprinkle with salt. - Bake
You are going to bake the plantain chips for 20 to 25 minutes, flipping them halfway through. Remove the chips from the oven before they begin to brown.

What Makes Plantain Chips Crispy
Brushing the plantain chips with oil is a necessary step if you want crispy plantain chips. In addition, the thinner the chip slice, the crisper they’ll turn out. You can use a knife or a mandoline; just make sure they’re as even, so they’ll bake all at the same time.
How to Store Homemade Plantain Chips
Store the baked plantain chips at room temperature in an airtight container for about 3 days. If they soften, place them in the oven at 300F for a couple of minutes. That said, I’m sure they will disappear fast!
What to Serve with Plantain Chips

Baked Plantain Chips Recipe

Ingredients
- 2 green plantains
- 2 tablespoon coconut oil, melted
- ¾ teaspoon salt
Instructions
Prep:
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Cut the ends off the plantains and score the skins so you can peel them. Cut each plantain into diagonal slices, as thin as you can manage but keeping them similar in size.
- Brush both sides of the plantain slices with coconut oil and place them on the prepared sheets. Sprinkle with salt.
Bake:
- Place the sheets in the preheated oven and bake for a total of 20 to 25 minutes, rotate and swap the baking sheets at around 15 minutes and flip the chips over.
- Bake for the remaining 5 to 10 minutes, removing the chips from the oven before they begin to brown.
