Place the tortilla on a flat surface and spread a little hummus on the tortilla. Layer the lettuce leaves in the center of the tortilla and place the tomato slices on top. Place 2-3 small falafel patties over the tomatoes.
Fold the sides of the tortilla in and roll the wrap burrito style. Slice it in half and serve immediately or place it inside a lunch container.
Pack for school:
Keep sides like fruit and veggies in separate lunch containers or compartments of the lunch box.
Refrigerate the lunch until you’re ready to pack it inside an insulated bag for school, with an ice pack if necessary.
