Lightly grease a medium non-stick with cooking spray. Grill the sandwiches over medium heat, for 2 to 3 minutes per side until the cheese melts and the bread is toasted.
Remove the sandwiches from the skillet and allow them to cool down for 5 minutes before slicing vertically into strips, about 3 or 4.
Serve immediately with soup, if desired.
