This creamy tomato tortellini soup is a quick and easy meal you can make for dinner or pack for a hot thermos lunch!

Italian sausage

can crushed tomatoes

prepared basil pesto

chicken or vegetable broth

half and half
1
teaspoon
onion powder
1
tablespoon
Italian seasoning
9-
ounce
package cheese-filled tortellini
¼
cup
grated Parmesan cheese
,
plus more for serving
Salt and fresh ground black pepper
,
to taste
Instructions
In a large soup pot, brown sausage over medium heat.
Add the chopped red pepper and sauté till tender. Add the garlic and sauté for 30 seconds.
Drain any additional grease from the sausage.
Add the crushed tomatoes with liquid, basil pesto, broth, half and half, onion powder, and Italian seasoning.
Bring the mixture to a simmer and stir in tortellini and parmesan cheese. Continue to simmer until cheese is melted and tortellini is cooked.
Season to taste with salt and black pepper. Serve with remaining Parmesan cheese.
To Pack in a Thermos:
Preheat the thermos
container with boiling water.
This step is optional, but it helps.
Heat the soup
in the microwave or stovetop
to a piping-hot temperature
.
Drain the water
from the thermos.
Fill the thermos
with the very hot soup.
Close the thermos container
and pack it inside a lunch bag.
Notes
Refrigerate leftovers in an airtight container for up to 3 days.
