Dry the washed lettuce completely before making wraps.
Assemble:
Lay one lettuce leaf on top of the other to create cups.
Layer the tomatoes, turkey cheese, and pickles onto each lettuce cup. Drizzle with Mustard.
Roll the lettuce wrap tightly and slice in half before packing into a glass lunch container. Pack additional fruit and veggies separately and refrigerate the lunch if preparing it ahead.

Pack this in a lunch bag with an ice pack, if necessary.
