These ham and cheese lunchbox tacos turn deli meat, cheese, and lettuce into an easy 5-minute lunch that's simple to assemble and pack.

Ham and cheese tacos are an easy way to turn everyone’s favorite sandwich combination into a lunch that’s more fun to eat. I’ll show you how to assemble them in 5 minutes and pack them so everything stays put until lunch.

Easy School Lunchbox Tacos

My kids have always liked school lunches that feel a little different from a regular sandwich, and folding ham and cheese into mini tortillas is about as easy as it gets for packing a quick lunch. Use any deli meat and cheese you have on hand to make these lunchbox tacos.

How to Make It

  1. Assemble
Place the mini tortillas on a flat surface and add the lettuce, ham, and cheese. Fold each tortilla in half.
  2. Pack the tacos
Place them upright in a compartment that’s large enough to fit them but snug enough to keep them from falling over.
  3. Pack it for lunch
Add fruit and other sides in separate compartments. Close the container and pack it in an insulated lunch bag with an ice pack.

Laura’s School Lunch Packing Tips

How do you keep the tacos from falling apart?

Pack them upright in a compartment that’s large enough to hold them without squishing them but small enough that they can’t fall over. This keeps the ham, cheese, and lettuce tucked inside.

Can I use a different deli meat?

Yes. Ham is our go-to, but turkey, chicken, or roast beef work too. Use whatever deli meat and cheese you already have.

Can I add dressing?

Absolutely. I wouldn’t add it directly to the tacos before packing because it can soften the tortillas. Pack Ranch dressing, honey mustard, or another favorite dip in a small lidded container and add it at lunchtime.

What should I pack with them?

Fruit, crunchy veggies, and other simple sides all work. Keep juicy fruit and other wet foods in separate compartments so the tortillas stay dry. A lunch box with compartments makes this especially easy.

How do I keep everything cold?

Keep the lunch refrigerated until it’s time to leave, then pack it in an insulated lunch bag with an ice pack.
