It’s a simple lunch you can prepare in no time with real ingredients for your kid to enjoy a healthy, filling meal that tastes amazing. Win-win!

What is in Pimento Cheese BLT

This delicious lunch idea is one you’ll want to make on repeat. Assemble pimento cheese with classic sandwich ingredients, and that’s all! This sandwich includes:

  • Bread: your favorite sandwich bread.
  • Pimento cheese: you can use store-bought, but it’s totally worth making your own pimento cheese.
  • Bacon: crispy, cooked, delicious!
  • Tomato: add freshness and tons of nutrition.
  • Lettuce: it’s not BLT without it!

You’ll find the measurements in the recipe card below.

How to make Pimento Cheese BLT

Take your lunches up a notch with this pimento cheese BLT sandwich that your kids (and you!) will enjoy eating. Check how easy it is to assemble:

  1. Spread pimento cheese
Distribute the pimento cheese on one slice of bread.
  2. Add the bacon
If using, cook the bacon in the microwave until crispy, pat dry with a paper towel to absorb excess fat. Cut it in half or coarsely chop it into bacon pieces and place over the pimento cheese.
  3. Add the veggies
Top with sliced tomatoes and lettuce.
  4. Final step!
Place the second slice of bread on top and close the sandwich.

How to pack Pimento Cheese BLT Sandwich for lunch

Now that you got this epic sandwich ready, you can add it to the lunchbox for an epic school meal! Pack it correctly following these tips and it will stay fresh and intact until lunchtime.

Layers order matters
Lettuce acts like a barrier to keep bread from getting soggy. Assemble every layer in the order I explain above, and this epic Pimento Cheese BLT Sandwich will look appealing when opening the lunchbox!

Use leftovers
Pimento cheese is a great dip you can enjoy to dip veggies, as an after-school snack, to load sweet potatoes, and, of course, leftovers make a great lunch like this one! Also, use bacon leftovers from breakfast to save even more time when assembling this sandwich!

Add a side
Pack this Pimento Cheese BLT with more veggies, fruit, or chips on the side to make it even more balanced and satisfying. These Homemade Fruit Cups, some banana chips, or these wheat things are terrific lunchbox additions kids love!

Use a firm container
Instead of zip bags, pack this sandwich or any other in a firm, sandwich-size container or lunchbox compartment. This helps to protect the sandwich inside the lunch bag so it doesn’t fall apart. More tips on how to pack sandwiches like a pro in this post.
