Cottage cheese is here to stay, and this veggie sandwich proves it can make a terrific lunch for hungry teens.

Veggie Cottage Cheese Sandwich
Recently, I’ve been adding cottage cheese to everything from banana pancakes to Alfredo sauce, and every time I was about to build a new school lunch, the cottage cheese package in the fridge gave me a wink. Yes, it was time to use it!
This cottage cheese sandwich with veggies makes a super healthy school lunch that fills the never-ending bellies of my growing teens (and, of course, I pack one for me too).
What You Need
Whole-grain bread is my favorite for this sandwich, but regular sandwich bread works perfectly, too. I fill it with cottage cheese, sliced cucumber, and lettuce leaves.
What Else to Put on a Cottage Cheese Sandwich
Make this sandwich more nutritious and different every time by adding tomato slices (place them far from the bread), chopped hard-boiled egg, avocado slices, chopped bell pepper, bacon bits, or shredded carrots.
Health Benefits of Cottage Cheese Sandwiches
With 24 grams of protein per cup (more than hummus and twice the amount of classic cream cheese, according to the USDA), cottage cheese is a terrific option to make your sandwiches more filling. When you combine it with fresh veggies, you also have fiber, as well as more vitamins and minerals.
How to Keep it From Getting Soggy in the Lunchbox
Cucumber is the watery ingredient of this sandwich, so you’ll want to create a barrier to keep it away from the bread. Place the cucumber in the middle, next to the lettuce and the cottage cheese, and the bread won’t get soggy. If using regular sandwich bread, toast it a little, also to prevent sogginess.
Cottage Cheese Veggie Sandwich

Ingredients
- 2 slices whole grain bread
- ⅓ cup cottage cheese
- ¼ cucumber, thinly sliced
- 2-3 green leaf lettuce leaves
- Salt and pepper, to taste
Instructions
Prep:
- If using regular sandwich bread, lightly toast the bread to for added texture (helps prevent sogginess too).
Assemble:
- Place the lettuce leaves on one slice of bread to create a moisture barrier. Top with the sliced cucumber, then spoon the cottage cheese evenly over the top. Season with a pinch of salt and pepper, if using. Top with the second slice of bread.
Serve:
- Slice in half and serve immediately. This sandwich is best enjoyed fresh.
