Fruit and Yogurt Parfait: Red, White, and Blue

Make a quick and healthy berry yogurt parfait with yogurt and leftover fruit for a no-fuss lunchbox side or snack!

Looking for a way to serve your kids all the delicious, juicy berries popping up this summer? 

This Fruit and Yogurt Parfait makes an easy, colorful snack perfect for busy summer days. Making these parfaits is so simple! Check out this video to see how I do it:

Cut the prep time for this recipe even shorter by making multiple parfaits at once and storing them in your fridge for grab-and-go moments. I like to keep them on a low shelf so my kids can easily grab them when it's snack time.

Let your kids get involved with prepping these parfaits! Older children can chop the strawberries, and younger ones can help assemble the ingredients in the jars.

How to Make this Fruit & Yogurt Parfait

All you need for these parfaits are blueberries, diced strawberries, and your choice of vanilla yogurt. I like using Greek yogurt, for the high protein content but regular yogurt or even dairy-free yogurt will work too!

  1. Grab 2 glass yogurt ramekins or 2 chilled thermos containers.
  2. Divide the strawberries between the containers. Top each with half the yogurt and the blueberries.
  3. Finish off with the remaining yogurt a sprinkle of granola.

Ingredients

  • ½ cup diced strawberries
  • 1 cup vanilla yogurt
  • ½ cup blueberries
  • 2 tablespoons grain-free granola, optional

Instructions

  • Layer the strawberries, yogurt, and blueberries inside a parfait cup, thermos or glass jar.
  • If using granola, pack it separately to keep it crunchy and sprinkle it on just before eating. 

Pack for school

  • If making ahead, keep refrigerated until school and then pack parfait in an insulated lunch bag with an ice pack.

    I love salads especially in the summer so the cucumber avocado salad is the one I pick to do and because I love both cucumbers and avocados it’s a must to make. It doesn’t really involve any cooking but I would still make it because it’s so good for you.

    I cannot imagine using hummus in cake. I am quite singular in that hummus is a dip, thats it, a dip. I cant wait to try hummus cake.
