Peanut Butter Sandwich with Pickles

Peanut butter and pickles in a sandwich? Believe it or not, this unusual sandwich combination is a 1930s American classic from the great depression that has withstood the time for a reason: it tastes surprisingly good!

The vinegary taste of the pickles gets toned down with the nutty, salty, and slightly sweet taste of peanut butter. Add two slices of bread and you get a tasty and inexpensive sandwich that makes a terrific lunch idea!

Since pickles are a wet ingredient, this sandwich is best enjoyed when you make it. If you want to add it to the lunchbox, keep reading to learn the packing tips.

What is in a Peanut Butter Pickle Sandwich

Three simple ingredients come together in this delicious and unexpected sandwich. More unique peanut butter sandwich ideas here. Here’s what you need:

  • Pickles: your favorite sliced dill pickles.
  • Sandwich bread: white or whole-wheat bread.
  • Peanut butter: creamy or chunky.

You’ll find the measurements in the recipe card below.

How to Make a Peanut Butter Pickle Sandwich

Three ingredients, five minutes, and you’ll have a surprising sandwich packed with flavor. Here’s how to assemble it to prevent sogginess:

  1. Prep the pickles
Place the pickle slices on a paper towel and pat them dry to absorb the excess liquid.
  2. Make the sandwich
Spread a thin layer of peanut butter on both slices of bread. Place the pickle slices on one of the bread slices, and close the sandwich. Enjoy!
  3. Pack it for lunch
If you want to enjoy it later, pack the sandwich inside a compartment of a lunchbox. In another compartment or container, store fruit, veggies, and your favorite lunch sides. Add an ice pack in the lunch bag if necessary.

Tips for packing Peanut Butter Pickle Sandwich like a pro

Since pickles are pretty wet, this sandwich is best enjoyed when you make it. That said, you can follow these tips to pack it properly and enjoy it hours later.

Absorb moisture
Make sure to put the pickle slices on a paper towel to absorb excess moisture as much as possible.

Keep bread from getting soggy
To prevent the bread from absorbing pickle juices, I recommend spreading the peanut butter on both bread slices. This way the peanut butter will “block” any excess pickle juice from soaking into the bread.

Make it a meal
Pack this sandwich with a serving of fruits, veggies, and your favorite healthy snacks, like this Homemade Fruit Cup or these Baked Banana Chips.

Separate wet from dry ingredients
Place the sandwich in a separate compartment of the lunchbox and the sides in another so veggies, fruits, and snacks don’t absorb the taste and moisture from the pickles.

My grandma made this for us all the time! I’ve never seen it as a real recipe; in fact I don’t know anyone who’s ever had this! But everyone I’ve made it for has liked it, even if they didn’t like pickles. I’ve always figured she had made up this combo. Tho we’ve always had mayonnaise on it also.
