This chicken salad croissant is an incredibly delicious, high-protein lunch. Here, you’ll learn how to make it and pack it for later so the flaky croissant stays fresh until lunchtime.

Chicken salad lunches are perfect when you want to make one main and turn it into a few meals for the week. My daughter loves it inside a buttery croissant because it makes the lunch delicious and it’s still a high-protein lunch. This is one of those lunch ideas teens love (and me!), and whether you make your own chicken salad or buy it, it’s always a winner.

How to Make It

  1. Prep
    If you’re adding lettuce, dry it well before assembling the sandwich. Keep the chicken salad in the fridge if possible.
  2. Assemble
    Slice the croissant in half and layer the lettuce on the bottom half before adding the chicken salad. The lettuce creates a barrier that helps prevent the croissant from absorbing moisture while it sits in the lunch container.
  3. Pack it for lunch
    Pack the sandwich in a sturdy lunch container so it fits snugly, so the croissant doesn’t get crushed or move around. Add fruit and veggies in separate compartments, then refrigerate or pack it in a lunch bag with an ice pack if necessary.

Can I use rotisserie chicken?

Absolutely! Rotisserie chicken is one of my favorite shortcuts because it’s already cooked and easy to turn into chicken salad.

Can I make chicken salad ahead of time?

Yes. Chicken salad keeps well in the refrigerator for several days, making it a great meal-prep option for packing lunches throughout the week. And in a pinch, you can also make canned chicken salad real quick.

How do I keep a chicken salad croissant from getting soggy?

Place a layer of lettuce between the croissant and the chicken salad to create a barrier that helps keep the flaky layers fresh. Pack the sandwich in a sturdy lunch container so it doesn’t get crushed, and keep it cold with an ice pack until lunchtime.

What can I serve with a chicken salad croissant?

Make a fresh fruit snack box, add banana chips inside another compartment, veggies and hummus on the side… anything goes!

Ingredients

Simple chicken salad:

  • 2 tablespoons plain Greek yogurt or mayo
  • ½ teaspoon mustard, optional
  • ½ celery rib, finely chopped
  • Pinch of salt and pepper
  • 4 oz ½ cup cooked chicken, finely chopped or shredded

For the sandwich:

  • 1 croissant, sliced horizontally in half
  • ½ cup chicken salad
  • Lettuce leaves

Instructions

Make the chicken salad:

  • In a medium bowl, combine the plain Greek yogurt with the mustard, salt and pepper. Then, add the finely chopped chicken and celery. Mix to combine.

Make it a sandwich:

  • Slice the croissant in half horizontally and open both sides.
  • Place lettuce on top of the bottom half. Spoon the chicken salad on top of the lettuce and place the top of the croissant in half, closing the sandwich.
  • Slice in half and enjoy.

Pack it for lunch:

  • Place the croissant sandwich in a lunch container where it fits snugly. Pack any sides, like fruits and veggies, in a separate compartment or container. Refrigerate until ready to pack inside a lunch bag, with or without an ice pack.
