My 8th grader has officially reached his independence, at least when it comes to packing his own lunch.
Last week, he surprised me by putting together three easy meals all on his own, filling enough to satisfy his hunger and keep him fueled through a long school day.
These school lunches are packed with protein and made with simple staples the kids find in the fridge. They take 5 minutes, so they are perfect to prep the night before or throw together in the morning, as he did.
Chicken Avocado Wrap

Basically, he opens the fridge, looks for leftovers and fresh items, and turns them into a wrap. Last week, it was chicken, tomato, lettuce, and avocado.
Turkey Sandwich with Bacon

He knows he gets so hungry that he assembles two sandwiches with double layers of meat!
Ham & Cheese Lunchbox Tacos

We were out of bread because he never told me he took the last 4 slices for lunch the day before, so tortillas did the trick!
