5 lunches I pack when I’m exhausted

As a full-time working mom of three kids, I don’t have to tell you how often I’m exhausted. You know it.

The chaos. The last-minute packed meal. The lunchboxes that come back intact. The healthy vs fast dilemma.

After packing over 7.000 school lunches through the years and counting, I know how to make it easy. With real ingredients you always have around, you can build quick and nutritious lunches that kids actually eat.

Here are 5 of my favorite effortless lunches that are always a win:

Protein Lunchable

A high-protein lunch that satisfies hungry little bellies and takes no time for exhausted moms. Bonus points if you boil eggs in advance (I always do!)

Ham and Cheese Roll Ups

All you need is ham, cheese, and 5 minutes. And even the kids can pull together these tasty roll-ups for you!

I open a jar of pickles and place them in the lunchbox along with fruit and crackers. Yep, I could pack this lunch even asleep.
