Greek Chicken Bento Box

Over the years, I’ve learned that packing enough protein in my kids’ lunch was key to keeping them full through the school day. This Greek chicken bento comes together with cooked chicken leftover from dinner, Tzatziki dip or hummus, fresh veggies, fruit, and pita chips, which are ingredients I often keep on hand and turn into a quick high-protein lunch.

Packing it For Lunch

  1. Assemble
Arrange all the ingredients inside a compartmentalized lunch container. Pack the pita chips or pita wedges separately, so they stay crisp until lunchtime. If you bought the dip in bulk, use a small lidded container.
  2. Pack it for school
Refrigerate the lunch until you’re ready to place it inside an insulated lunch bag with an ice pack, if needed.

Laura’s School Lunch Packing Tips

What kind of chicken is best for a bento box?

Use any cooked chicken you have on hand. Leftover grilled or baked chicken and rotisserie chicken are my go-to options because they make packing this lunch quick. Trust me, nobody is grilling chicken before breakfast.

Can I make this bento ahead?

Yes! Cook the chicken ahead of time and prep the fruit and veggies so you can assemble the lunch the night before or make several lunches at once for the week.

How do I keep the pita chips crisp?

Pack them in their own compartment or a small container so they don’t absorb moisture from the other ingredients.

What else can I add?

If your kids have bigger appetites, add cheese cubes, a hard-boiled egg, or extra fruit to round out the lunch.
