Make this easy salami and cheese sandwich in 5 minutes for a simple lunch that's easy to pack for school.

A salami and cheese sandwich takes just 5 minutes to make and packs especially well for school. Here, you’ll learn how I layer it and pack it so the bread stays fresh until lunchtime.

Growing up, I loved finding salchichón, Spain’s version of salami, in my lunchbox, so it’s a deli meat that I’ve often used in my kids’ school lunches. This sandwich is one of those simple school lunch ideas that’s easy to make and always satisfying if savory lunches are a go-to.

Packing It for Lunch

  1. Assemble
    Spread mayonnaise on the bread, then layer the lettuce, salami, and cheese before closing the sandwich.
  2. Pack it
    Slice the sandwich in half and place it in a hard lunch container so it doesn’t get flattened.
  3. Add the sides
    Pack fruit, veggies, nuts, or other lunch sides in separate compartments and refrigerate until it’s time to go.

Laura’s School Lunch Packing Tips

What cheese goes best with salami?

I like Gouda, Cheddar, or Manchego with salami, but you can use whatever sliced cheese you already have. The combination is flavorful enough that there’s no need to make this complicated.

How do you keep the bread from getting soggy?

Make sure the lettuce is completely dry and place it against the bread before adding the other fillings. If you’re adding tomatoes or another juicy ingredient, keep the lettuce or cheese between it and the bread.

What’s the best way to pack it?

Use a hard sandwich container so it doesn’t get flattened. Keep fruit and other juicy sides in separate compartments so their moisture doesn’t reach the bread.

Can I make it the night before?

Yes. Assemble the sandwich, refrigerate it in a sealed container, and keep it chilled until you’re ready to pack it. Add an ice pack to the lunch bag to help keep everything cold until lunchtime.

Ingredients

  • 2 slices sandwich bread
  • Mayonnaise
  • 2 ounces salami, sliced thin
  • 1 ounce cheese, sliced
  • Lettuce leaves, optional

Instructions

Assemble

  • Spread the mayonnaise over each slice of bread. Place a piece of lettuce onto one slice and top it with the Salami, cheese and remaining slice of bread.
 Cut the sandwich in half and pack it into a compartmentalized lunch container. Fill the rest of the compartments with fruit and nuts. Refrigerate everything until ready to use.
