High-Protein Snack Bento with Pepperoni Pizza Egg Cups

Your family will devour these Pepperoni Pizza Egg Cups, and you’ll love how easily they come together. It’s as simple as choosing your child’s favorite pizza ingredients, and adding them to a mixture of egg, milk and cheese.

Make these egg cups ahead with pizza toppings leftovers and store them in the fridge for 3 days. You can add them to snack bentos or healthy school lunches with veggies, fruit, or your favorite sides. Yes, the perfect meal prep recipe!

Since these egg cups are a filling protein-packed snack, they make a great addition to any lunchbox, especially to build bento boxes for teen athletes with bigger appetites!

Should Pizza Egg Cups be Eaten Warm, Cold or at Room Temperature?

There’s no right or wrong temperature to enjoy these pizza egg cups. You can eat them cold straight out of the fridge, at room temperature when packed in a lunch container, or warm from a thermos.

Ingredients

Basic staples and pizza toppings come together in these delicious high-protein egg cups you can prepare with very little work. Here’s what you need:

  • Eggs: add protein, a fluffy texture, and bind the ingredients.
  • Milk: dairy or non-dairy milk.
  • Pizza toppings: this time I added pepperoni and olives. You can choose your favorites, like ham, sausage, mushrooms, bell pepper, onions, tomatoes, spinach, etc. Just be sure everything is chopped and meat products are cooked.
  • Shredded mozzarella: or other cheeses like Colby Jack, Mexican cheese blend, pepper Jack, Swiss, or any variety of Cheddar.

How to Make Pepperoni Pizza Egg Cups

Mix everything in a bowl, fill the muffin pan, and let it bake: it’s THAT simple to make these tasty Pepperoni Pizza Egg Cups. Cook ahead and enjoy them whenever you want at school, at home, or on the go! Here’s how to make this recipe:

  1. Prep
Preheat the oven to 350F and grease a 24-count mini muffin pan.
  2. Mix the ingredients
In a large bowl, whisk the eggs and milk. Add in chopped pizza toppings and shredded cheese. Mix to combine all ingredients.
  3. Fill the muffin pan
Distribute the egg mixture evenly into the muffin pan cups, filling them about ¾ of the way up.
  4. Bake
Bake in the preheated oven for 15-18 minutes. Using a regular-sized muffin tray (yields 12) requires a longer baking time of approximately 26 to 28 minutes.
  5. Remove
Remove the pan from the oven and let them cool in the pan before carefully removing them with a small knife or small spatula.
  6. Refrigerate
Once cooled, refrigerate the pizza egg cups in an airtight container or zip bag for up to 3 days.

Check out how easy these egg cups are to make! It’s the perfect recipe to get little hands involved in the kitchen.

How to Store Pepperoni Pizza Egg Cups

Once the pepperoni pizza egg cups are out of the oven and have cooled down to room temperature, remove them from the muffin tray. Then, transfer the egg cups inside a zip bag or an airtight container and refrigerate for up to 3 days.

How Long Can These Keep in the Fridge

These Pepperoni Pizza Egg Cups keep in the fridge for 3 days and are a terrific ingredient to meal prep high-protein snack bentos.

How to Pack Pizza Egg Cups in a Thermos

If you make pepperoni pizza egg cups ahead and want to enjoy them warm, they’ll need to be heated up and placed inside a thermos container. While they won’t be as hot as out of the oven or microwave, they’ll remain warm.

How to Pack Pepperoni Pizza Egg Cups Snack Box

Pack these irresistible Pepperoni Pizza Egg Cups properly and your kid will enjoy a fresh snack bento box that tastes like their favorite meal! Here’s how to pack this protein-rich bento:

  • To enjoy these at room temperature, place 4 to 6 egg cups inside the main compartment of a lunch container.
  • To eat warm, heat the pizza egg cups in the microwave for 1 minute, stopping the microwave halfway through to flip them over. Immediately transfer them inside a thermos container and close the lid.
  • Finish packing this meal by adding fruit, veggies, and any other sides inside a bento box. Pack everything inside a lunch bag.

Question: I prefer using regular muffin cups. What is the time and temp if using the larger muffin cups?

Yes! I would stick them in the fridge overnight before using and then defrost in the morning.
