Veggie Snack Box with Salami and Cheese

Between school and sports, my kids are always starving! That’s when I grab a snack box like this one with salami and cheese – the perfect way to recharge until dinner. You can even prep it the night before for a fast, healthier alternative to prepackaged versions!

My rainbow snack box, ham and cheese snack pack, and snack box with beef jerky are other quick and easy options that store perfectly in the fridge and offer a healthy, grab-and-go snack that keeps everyone happy!

Ingredients:

You can follow the recipe or get creative and customize your snack box however you like. Here's what I used for this salami cheese and veggie snack box:

  • Salami: any deli salami will work. Genoa is probably the most popular option.
  • Cheese: for a rich, creamy flavor to balance the salty salami. Try favorites like cheddar, Swiss, or even string cheese.
  • Veggies: crunchy and nutritious veggies like snap peas and carrots add fiber and vitamins. You can also use cucumber slices, bell peppers, or cherry tomatoes for variety.
  • Dark chocolate: a small piece of dark chocolate adds a little sweetness without overdoing it. You could also use dried or fresh fruit for a naturally sweet alternative.

How to Make a Salami and Veggie Snack Box

Whether you choose to make this high-protein option for a snack or lunch, here's how to assemble everything, so it stays fresh until it’s time to chow down:

  1. Prep
    Wash veggies, cut cheese and slice your salami into rounds if it is not already sliced.
  2. Assemble
    Start by placing wetter items, like sugar snap peas and carrot sticks, in one compartment of your snack box. This keeps them separate from the other ingredients and prevents any sogginess. Next, add your salami to its own compartment and keep cheese and any crackers, if you choose to add them, apart.
  3. Include a treat
    Place the piece of dark chocolate in its own section to keep flavors from mixing.
  4. Pack it for school
    Place your salami and cheese box inside a lunch container, packing any lunch sides separately, and keep refrigerated.

You can easily prepare a veggies snack box ahead and store it in the fridge. But why stop at one? Save yourself time and prep a few at once, so you're set for days!

Prep Veggies in Advance
Wash and chop veggies ahead of time, then store them in the fridge in airtight containers. You can quickly grab what you need when assembling snack boxes in the morning or the night before. No more morning chaos!

Use the right container
The best way to prep ahead a snack or lunch is to use a bento-style lunch container. This way you can keep wet ingredients, like fruit, away from dry items like crackers or nuts. Everything stays fresh longer!

Label with dates
If prepping for the entire week, label each box with the date it was made to ensure you’re eating the freshest snacks first and avoiding anything that might have been forgotten.

Keep it Chilled
Store this snack in the refrigerator until you're ready to use. Then add an ice pack to keep everything inside the lunch bag cool and fresh.

Mix and Match
The flexibility of these snack boxes means you can use whatever you have on hand. Out of grapes or carrots? Toss in cucumber slices, cherry tomatoes, or even blueberries. No salami? Swap it with ham slices or hard-boiled eggs, and you're good to go!

Ingredients

  • 2 ounces salami slices
  • 1 ounce cheese
  • ½ cup veggies, sugar snap peas & carrots
  • 1 ounce dark chocolate

Instructions

Prep

  • Wash fruit and veggies. On a flat surface, roll up the deli ham slices and cut into bite-sized pieces. Slice the cheese into squares.

Assemble

  • Place cheese and ham in one compartment. Put the rest of the items in different compartments. Keep dry ingredients like pretzels separate so they don’t get soggy

Pack for later

  • Refrigerate everything until ready to use and then pack in a lunch bag with an ice pack.
