Zucchini Pizza Bites Lunch

These bite-size pizzas are the perfect lunch for adults and kids alike. They are low-carb (hurray for us!) and a great way to get kids to eat more veggies. The bonus is that they are ready to eat in less than 10 minutes! Seriously!

Veggies are not on the top of our kids’ list of things to eat and they certainly wouldn’t trade a pizza for a plate of veggies!

But not with these Zucchini Pizza Bites! They are everything kids love about a pizza: the cheese, sauce, and toppings but on a veggie crust. This way they enjoy the flavors they love while getting a dose of veggies.

I know, I know. Zucchinis still have a “green” skin so they might fall into the green food category. I get it. If this is the case, either purchase yellow zucchinis or, simply peel it!

Now it’s white. So this veggie just turned into white foods. Like chicken, potatoes, pasta, rice, bread… yeah, you get it.

How to Make Zucchini Pizza Bites

What I love about this recipe is that this pizza also requires minimal effort on your part, since it is made with sliced zucchini, pizza, sauce, cheese, and toppings! What did I tell you… easy peasy.

Zucchini Pizza Bites

These Zucchini Pizza Bites are bite-size, yummy, and the low-carb way to enjoy pizza! Top them with your favorite toppings and get the party started.

Ingredients

Scale
  • 1 large zucchini, sliced diagonally into ¼-inch thick rounds
  • ¼ cup marinara sauce
  • ½ cup shredded Mozzarella cheese
  • ¼ cup mini pepperonis
  • 2 tablespoons sliced black olives

Instructions

  1. Preheat the oven to broil. Line a large baking sheet with parchment paper.
  2. Place the zucchini slices onto the lined baking sheet in an even layer. Spread the marinara sauce over the top of each slice. Top with cheese, pepperoni, and black olives.
  3. Broil for 2 to 3 minutes or until the cheese is melted

Notes

This recipe can easily be doubled or tripled.

If your oven does not have a Broil setting, preheat the oven to 350F with the rack in the middle and bake the zucchini pizzas for 7-8 minutes until the cheese has melted and the zucchini is softer.
