Zucchini Pizza Bites Lunch

These bite-size pizzas are the perfect lunch for adults and kids alike. They are low-carb (hurray for us!) and a great way to get kids to eat more veggies. The bonus is that they are ready to eat in less than 10 minutes! Seriously!

Eating pizza with the kids can leave any adult full of guilt. Because not only do we eat our own serving but their crusts… yeah, you know what I mean. And soon, the guilt sets in.

And we remember that another day went by without eating as many veggies as we meant to eat.

And the kids? Well, veggies are not on the top of their list –much less, they’d trade them in for a pizza!

But not with this incredible recipe. It’s two in one! Everything they love about a pizza: the cheese, the toppings, the crust… and everything we adults want in our kids at mealtimes: balance of fun food and consumption of veggies.

I know, I know. Zucchinis still have a “green” skin so they might fall into the green food category. I get it. If this is the case, either purchase yellow zucchinis or, simply peel it!

Now it’s white. So this veggie just turned into white foods. Like chicken, potatoes, pasta, rice, bread… yeah, you get it.
