In this post, you’ll learn how to pack this falafel salad quickly for school and keep it fresh until it’s time to devour it!

Lunchbox Salad with Falafels

Do you know my favorite thing about making air-fryer falafels for dinner? Using the leftovers to create this quick falafel salad that my kids love. No leftovers, or don’t want to make your own? No problem, grab some pre-made falafels from the freezer section for a convenient, healthy school lunch.

These crispy falafel patties contain plant-based protein that up the nutrition of any simple side salad for school. They’re perfect for busy teens who are packing their own lunch. All you need is a little drizzle of dressing, like my homemade ranch dressing, and boom! Lunch box magic!

Ingredients

  • Mixed Greens: for a fresh and light base. You can use any type of greens, such as arugula, spinach, or romaine.
  • Cherry Tomatoes: adds a burst of sweetness to balance out the savory falafels. Grape tomatoes also work or even diced cucumbers.
  • Falafels: packed with healthy and delicious plant-based protein!
  • Ranch dressing: I’m using ranch because my son loves the creamy and zesty taste! Another great dressing that pairs great with this salad is this SERIOUSLY addicting hummus salad dressing.

How to Pack a Falafel Salad for School Lunch

You can savor this falafel salad at home, or use these tips to keep it fresh in a lunch box:

  1. Build the Base
    Start by placing a bed of mixed greens in a hard lunch container with compartments. Add the cherry tomatoes and any other veggies on top of the lettuce. Then, place your falafels in a separate compartment to keep them nice and crispy.
  2. Pack the Dressing
    Pour the dressing into a small lidded container. Wait to drizzle it over the salad right before eating to keep everything fresh and crunchy.
  3. Pack for School
    Store both the salad and dressing separately in the fridge until ready for school. Keep any lunch sides like crunchy banana chips apart so they stay dry.

Large containers where salads can be layered or one with compartments where you can separate ingredients help prevent wilted greens.

Keep the greens crisp
Adding an ice pack is a great idea year-round because it regulates the temperature and keeps everything inside the lunch bag cool and fresh. Warm temperatures will wilt greens and release juices from moist ingredients.

Pack Dressings Separately
Dressings can turn your salad into a soggy mess, so it’s best to pack them in a small leak-proof container and drizzle it over the salad right before eating.

Add protein
Bulk up this lunch even more by adding hard-boiled eggs or rolled-up deli meat.

Include a treat
Keep them going longer by including some energy-packed sweet extras like these homemade peanut butter granola bars or these no-bake chocolate brownie bites!

Ingredients

  • 1 ½ cups mixed greens
  • ½ cup cherry tomatoes, halved
  • 4 small falafels
  • 1 tablespoon Ranch

Instructions

Assemble the salad:

  • Make a base with your mixed greens in a lunchbox with compartments. Layer the cherry tomatoes on top of the lettuce. Keep falafels in a separate compartment.

Dressing:

  • Fill a small lidded container with the salad dressing. Wait to drizzle salad dressing until right before eating.

Pack it for school:

  • Pack the salad and the dressing inside a lunch bag, with an ice pack to keep it cool.
