Grilled Turkey Sandwich with Mozzarella Cheese

Every time I make this grilled turkey sandwich with mozzarella cheese I catch one of my teens swooping in to snatch it straight from the skillet before I can even pack it-so plan to make extra! Turkey, melty cheese, and crispy bread? Hard to blame them!

Similar to my cranberry grilled cheese and chicken pesto sandwich, this turkey sandwich is simple to make, comforting, and totally satisfying! So whether it makes it to school lunch or disappears on the spot, it's sure to get a thumbs up!

Ingredients

You can find the exact measurements for this turkey sandwich on the recipe card below, but here’s what you’ll need, along with some easy swaps:

  • Bread: any sandwich bread works, but a hearty option like sourdough will hold up best while grilling.
  • Mozzarella Cheese: for that melty, gooey perfection. Provolone or cheddar are also great options.
  • Turkey: use deli turkey, thinly sliced leftover turkey, or your favorite deli meat.
  • Lettuce: adds a crisp texture and helps keep the sandwich fresh.
  • Tomato: gives fresh, juicy flavor in every bite.
  • Avocado or Guacamole: optional, but deliciously creamy and healthy.
  • Butter: for grilling.


How to Pack a Grilled Mozzarella Turkey Sandwich for Lunch

This turkey mozzarella sandwich is simple to pack but gives school lunch a gourmet feel! Here’s how to do it:

  1. Assemble the sandwich
    Spread a layer of mashed avocado (if using) on one slice of bread. Place the lettuce, followed by the turkey, tomato, and finally the mozzarella cheese. Top with the other slice of bread and butter the outside of the sandwich. This layering will help prevent the sandwich from getting soggy.
  2. Grill the sandwich
    Heat a non-stick skillet over medium-high heat. Grill sandwich for about 2-3 minutes on one side, until golden and crispy. Flip, then grill for another 1-2 minutes until the cheese gets all melty and gooey.
  3. Let cool
    Let the sandwich cool completely to room temperature before packing to prevent moisture from building up in the lunch container.
  4. Pack it for school
    Pack sandwich in a durable lunch container and refrigerate along with any healthy sides until it's time for school.

Keeping it Crispy Until Lunch at School 

The trick to packing grilled sandwiches so they stay golden and crispy is to avoid trapped steam. Let your sandwich cool completely before packing it in a hard container. Add a napkin inside to absorb any leftover moisture. and If you're adding fresh fruits or veggies, pack them separately so the bread stays nice and toasty.


School Lunch Packing Tips for Grilled Sandwiches

Whether you're packing this sandwich for school or enjoying it at home, these tips will keep it tasting fresh and amazing!

Use the right container
Use a sturdy lunch container to protect it from the chaos of the lunch bag and keep everything intact.

Keep it safe
Consider adding an ice pack to the lunch bag to keep the sandwich and any lunch sides fresh and safe to eat until lunchtime.

Boost nutrition
Add healthy sides like homemade banana chips or a yogurt parfait for extra nutrition. Keep bigger appetites going longer with a hard-boiled egg or delicious oatmeal raisin granola bar!

Reduce browning
Avocado browning is totally normal, but a splash of lemon juice can slow down the process. Using guacamole is another way to avoid browning.

Pack extra spread:
If you’re using mayo, mashed avocado or guacamole, spread it thinly so it doesn't make the bread soggy. You can pack extra in a small leak-proof container and add it just before enjoying your sandwich at lunchtime.

Ingredients

  • 2 slices sandwich bread
  • 2 slices mozzerella cheese
  • 1 ounces deli turkey
  • handful spinach leaves
  • 2 slices of tomato
  • butter, for grilling
  • Mashed avocado or guacamole

Instructions

Make the sandwich:

  • Spread a thin layer of avocado on one slice of bread and place a slice of cheese on each bread piece. Then layer the turkey, tomato and finally the spinach. Close sandwich and butter the outside.

Grill:

  • Grill sandwich for about 2 to 3 minutes on medium-high heat until it's golden and the cheese has begun to melt on that side. Flip the sandwich and grill on the other side for another minute or 2 until it's golden and crispy and the cheese is melted.

Pack for school:

  • Wait for the sandwich to cool to room temperature before packing it inside a hard lunch container. Keep fruit and veggies separate and refrigerate everything until ready for school. Then pack it in a lunch bag with an ice pack, if necessary.
